"THE BUSINESS OF CAKE DECORATING HINTS AND HELPS"
PART 1...we hope that the info we share with you is of help. We've
already covered 'pricing, delivery' and how we go about arriving at a fair
price....Jan. 30th. Pwd sugar did a fantastic job of lining this all up
for you. This will soon (if not already) be posted in our chat libraries
for you. We don't want to repeat what we've just covered, but since this
topic seems to be needed so much, we will repeat it again sometime.
Dolores' Part:
What I would like to talk about now is how we have gone about to learn
all we have about the wonderful techniques we use. The first place to start
has been right here on aol. What I would have given to have all this info
at hand when I me, I taught myself cake decorating from Wilton books ...30+
years ago. There were no classes then.
If I were learning today, the first thing I would do is to join ices.
$27.00 per year (International Cake Decorating Society') is an organization
for any decorator. Each month you receive a newsletter full of pictures
in color and other news. There is a convention each year around august
always in different cities. (this year in Orlando Florida). It is a little
of an expensive sacrifice to attend these conventions I know. But you learn
so much that the benefits are well worth the efforts. Here there will be
about 1,000 of the most fantastic cakes you'll ever see. Then you can also
attend workshops, retail & wholesale vendors where you can buy hard-to-find
items, authors with their books for sale. And much more. Not to mention
all the fun you'll have meeting other decorators. No more sharing group
exists! The convention lasts about 5 days and its best if you sign up by
June 1st. All information to join is in 'discuss cake decorating.' there
is even a <state> meeting held according to each state's desires. Mostly
1-2 times a year. Demos & sharing, fun. Probably one of the most important
reasons for being a member of ices is to keep in touch. Most people who
have regional classes post notice in the newsletter. Special classes were
important to me. It was a sacrifice but well worth my efforts. Ices is
on the web at: http://www.ices.org.
Ideas --- we all need ideas for cake designs. There are lots
of books, but for me 'ideas' have formed easiest when I need to create
a cake for my own children. My new ideas - easiest when for my kids - form
around techniques that I like or have just learned, etc. I made a <baby
shower> babycake.zip cake
for my grandson containing techniques I had recently learned. When my daughter
was married I used gum paste flowers along with her desires for creating
her wedding cake. Her cake how-to and
photo
Do you 'really' want to open a bakery? I have a bakery <and
retail supply shop> (called Sugarcraft). We (2 daughters & I) opened
in 1980. We run it similar to how you do your cakes at home. We use Duncan
Hines cake mix for our all-occasion cakes and 50 lb bags for wedding cakes.
Our cakes taste good like yours and are decorated with details the way
home decorators do. With 50+ cakes for a Saturday real fancy decorating
won't fit into our schedule. Our cakes are much more detailed than super
market cakes. But I am the only one here who can do gum paste or rolled
fondant, lace points, etc. It took many years for us to build <just>
cakes into a profitable business. This is why most bakeries also sell donuts
probably. But since I don't need the money to <exist> I could afford
to wait. Now we have a unique type of shop. I hope this explains a little
bit more into why it may be best to just do cakes at home rather than to
open a bakery. With a shop outside the home you will always have rent,
utilities and many more expenses that you don't have when doing cakes at
home. I wouldn't have opened the shop either, except that my girls wanted
to do it together and they make a nice income. Otherwise, I would prefer
to do cakes at home. Then I would be more free to do other fun things.
Like attending ices, cake shows and the like. I would certainly have much
more time to play with gum paste which I'd dearly love doing.
-
Synmkn28: You mean mix frosting & let sit overnight before using?
-
Dolores777: yes mix & leave set awhile at least
Please pay special attention to my monthly newsletter and the section on
'from a business perspective.' Licenses --- never open a business
before checking all this out!!! Then when you find a place, check with
the health dept. Before you sign papers to be sure they will let you have
the type of bus. You want in this location. Since I have a shop I am in
position to know that most home decorators don't have a license of any
kind. Please realize before we start talking about this, laws vary between
states, counties and cities. More metropolitan areas have stricter laws.
Ignorance is never an excuse. There are basically 4 areas you must comply
with when setting up a business:
-
1. Heath dept. --- county - or city if you live in a city. Ask them for
a list of <current> regulations.
-
2. Building & zoning --- will the area where you want to open a business
be zoned for business - or is it strictly residential?
-
3. Department of agriculture --- you must be inspected <also> by them
whether you live in the county or the city.
-
4. You will probably need a vendor's license. This allows you to collect
sales tax for items you sell and pay it to the state. You just go to the
county offices and obtain this. You will need to tell them what type of
business you are opening. Tax papers will be mailed to you, you fill them
out and send them with your check each month. Some areas also require a
'business license.' I know nothing about this.
Taxes --- I have my lawyer <a cpa> do my yearly federal taxes. Other
than this, I do the rest myself.
MESSAGE: From Carolyn Lawrence..... would you mention that Kansas
City, Missouri is having a cake show April 5 and 6 and we would invite
anyone interested to send for information forms. They can e-mail me if
they want and I will see that they get them. Afterwards, we are having
some classes with Maureen Stevenson - probably figures and flowers both.
They are very reasonable - $65 for a 2 day class. She is also one of our
judges. I have some extra room at my house if anyone needs a place to stay.
Just don't bring the white gloves!!
NEXT WEEK: "You want how much cake? Proportions. You want what
on your cake? (Lace points, odd size pans, use of ribbon or pearls)" Synmkn28:
You mean mix frosting & let sit overnight before using? Dolores777:
yes mix & leave set awhile at least Pwd Sugar: We intentionally mix
our icings the day before using.
-
Klserna: Where can I buy Cake Dummies, and what are the dummies made of??
-
Dolores777: Our shop carries dummies - styrofoam
-
Mleigh1: what are cake dummies
-
Dolores777: to make fake cakes on
-
Pwd Sugar: There are two kinds of Styrofoam dummies. One is the little
fused beads and the other is the regular styrofoam. If you are going to
stick things into the dummy cake the regular Styrofoam is much better.
-
Cakestmper: Takes as much time and icing to decorate as a real cake. Cake
dummies are styrofoam, craft store, cake store, Wilton
-
Klserna: What is the price range?
-
Gpastry: yes fake styro foam rounds
-
Dolores777: find them in a cake dec. supply shop. More $'s than a real
cake. 5-6.00 up I think
-
Pwd Sugar: Charge the same as if it was real cake
-
Dolores777: I charge the same if I sub dummies...more trouble really
-
Klserna: The class I am taking, has us using cake dummies instead of real
cakes.
-
CarolA5238: Dolores, My dummies came clean after sitting in the rain a
couple of days.
-
Pwd Sugar: Sitting in the rain doesn't work for us. Usually followed by
a dirt storm LOL
-
Cakestmper: I put a decorated dummy on trash can once, had great time watching
trash men!
-
Leg486: Why would we use cake dummies?
-
Gpastry: easy to work with and make lots of money
-
GREAT NEWS! MARSHA AND ROLAND ARE ON AOL!!! From Dolores... ---
this is Marsha, decorators...isn't this great having her with us!
-
Winbeckler: Just thought I tell Pwd Sugar that I got her message and am
checking out the chat
-
Winbeckler: Hi, Karen--send me more photos for the ICES newsletter
-
I Do Cakes: Marsha, will the demo info page be in the next newsletter?
-
Winbeckler: The demo schedule will be in the May newsletter
Synmkn28: I use buttercream icing to glue grahem crackers together for
individual Gingerbread houses - great
WSVKJ: Pwd sugar: I'd like to thank you for answering my questions on
fondant.
-
EmtyNstr: I'm new and would like to learn more about legalities, such as
the use of character pans,
-
(From Dolores) Empty...if you read this...we've been covering this for
many weeks on our chats. You can either get them in the AOL libraries under
CHATS or from my web page at: http://w3.one.net/~proicer/index.html...Chat
Info
-
Gpastry: Went to a Cake Decor Seminar in Atlanta GA last Monday... Very
informative
-
Dolores777: Who taught Gp?
-
Gpastry: Kim Cutler... The seminar was sponsered by the US PAstry Alliance
-
WSVKJ: How do you know what to charge for your cakes? (From Dolores) This
has also been covered in other chats...If you need more info than this,
please email me at Dolores777
-
Pwd Sugar: WSVKJ - Charging for cakes depends on where you live and your
expertise
-
WSVKJ: Pwd.sugar: How do I know what to charge for my cakes?
-
Dolores777: WS:::try checking out what the going rate is for your area
bakeries to begin and charge MORE than they do
-
Pwd Sugar: How much time to you put into them? What do your ingredients
cost? What is the going price for cakes in your area? Consider all of those
things and then come up with what you consider a fair price.
-
WSVKJ: How do I start my business?
-
Pwd Sugar: Start a business very slow. Referrals from satisfied customers
is the best route.
-
WSVKJ: Dolores777: what if you just want to do cakes for your neighbors??????????/
-
Dolores777: Do so WS::: that gains you experience
-
WSVKJ: Do I still have to go to the health department? D
-
olores777: technically 'yes'
-
Roca Mesa: when selling food to friends, it must be done from your home,
right?
-
WSVKJ: Why
-
Dolores777: Laws are meant to protect your customers WS::
-
WSVKJ: How old do you have to be to start a home cake decorating business?
-
Pwd Sugar: Many of us started doing cakes from our homes and then it grew
until we had to go through all of that legal stuff. Technically you should
be legal. Practically that is not always possible.
-
Hmebaker: In Ohio, we have a "Home Bakery License", any other states have
something similar?
-
Pwd Sugar: Some states have that - it would be nice if all of had that
-
Dolores777: Hm:::dept. of agriculture right?
-
Hmebaker: Yes,
-
GVinfinity: I live on a military base and got permission to do cakes out
of the house but with there
-
Pwd Sugar: Dolores we have had several questions about starting a business
- Would you give your web site address so that they can read the last six
weeks info. http://w3.one.net/~proicer/index.html
-
Pwd Sugar: A couple of weeks ago I told you I have two kitchens in my home
and that my work kitchen is off limits to my animals - I actually have
a storm door installed between my two kitchens. They know they are not
allowed past that door.
-
Cakestmper: NO posters in grocery stores, Health dept looks for those and
checks them out
-
GVinfinity: I am trying to find different ways to advertise. I am trying
to get people first of all
-
Dolores777: GV:::leave fliers or bus. cards upon delivery
-
Dolores777: GV:::maybe start making candies:::they sell well & get
you cake customers too-fast
-
BronnieF: I had my wedding cake business at home over 15 years, health
dept. NEVER came to visit my kitchen, they are too busy with restaurants,
etc. Don't be afraid to open your business/
-
GVinfinity: I have a friend in Japan who is just starting candy making
along with her cakes
-
Dolores777: ....Would this be Brenda Moore GV???
-
AlAngelia: Is your newsletter monthly Dolores777?
-
Dolores777: Yes monthly
-
SAvanna673: Delores, can we subscribe to your newsletter?
-

me --kwalker320@aol.com
-
Dolores777: RED VELVET:::make a yellow cake but add 2 TB cocoa & red
food coloring
-
Roca Mesa: Dolores, what is best way to teach a kid?
-
SpecBySue: many Wilton teachers offer kids classes. I do private classes
for girl scouts etc. - start simple and easy - play with it. (Sorry---so
busy last night!) I let anyone, child or adult come into my classes. I
have a 12 yr old right now who is coming with her Mom. Its entirely the
responsibility of each individual to work at their own pace. I do give
the kids as much special attention as I can. They usually do fine IF they
practice between sessions.
-
Roca Mesa: she's Girl Scout
-
Pwd Sugar: I start my grandkids on playdough animals and roses - to begin
learning the GP basics
-
Roca Mesa: What is gum paste?
-
Gpastry: What gumpaste do you use
-
Pwd Sugar: A sugar paste worked by hand to form a multitude of flowers
and things
-
Dolores777: we all have favorite gp
-
BronnieF: I started my young daughter with chocolate work, she won several
shows, then onto cakes
-
Cakestmper: I like the Tylose powder recipe, very easy, doesnt need lots
of instructions
-
Pwd Sugar: I love the CK and Bakels mixed half and half.
-
K2K SHAUNA: I BUY MINE FROM TOYS'R'US
-
Gpastry: it is cheaper than wilton recipe or powder stuff
-
Dolores777: What is Tylose? GP?
-
Winbeckler: Tylose or CMC is a man-made gum used in place of gum tragacanth.
-
Cakestmper: Its a powder, ingredients used in ice cream, I got it from
Nicholas Lodge
-
Pwd Sugar: Lots of good workable GP. We each have our favorites. You can
learn basics techniques and take it as far as your skills will let you
go.
Pwd sugar's PART:
What do you do with your cake scraps? You say what are cake scraps?
Cake scraps are what we remove from the cakes when we level them to stack,
ice and decorate. We put those in the 3 lb recycled sour cream containers
and then in the freezer. When we have accumulated enough scraps we either
take them to one of the caterers and he makes cookies out of them. Or use
them to make a layered dessert. Cake Scraps, pudding, cool whip, fruit,
cake scraps, pudding, etc. Our favorite cookie recipe can be used with
all kinds of flavors. It is especially good with the Kaluaha chocolate
scraps

THE EXPLANATIONS ...................
-
Style name & # is used if they want a design chosen from my picture
Albums.
-
I allow them to use several flavors in their cakes the bigger the cake
The more flavors they can use. 3 tiers - 1 or 2 flavors, 4 tiers - up to
3 Flavors and etc. Style means the style of stand that they want to use.
-
Pedestals, Stacked, etc.
-
Flowers is if I have to make sugar flowers - the kinds that she wants in
what kind of icing. Such as royal roses, flu-flu's, petunias and gp freesia,
stephanotis, ivy leaves and etc. If it takes more space than you have here
I use the back side of the form page.
-
The next line is a place I can just check to quickly tell me what kind
of flowers are going to be used on this cake.
-
Colors is for the sugar flowers or cake icing or whatever that you have
to make
-
Lace points - I have the ones I use most named and enter that here.
-
Cake top - I write (she has hers) or (make if I am making this) and the
price.
-
Fountain deposit is in addition to the other deposit and will cover the
cost of replacing this in case they don't return it or it is returned damaged.
I return this deposit after checking to make sure the fountain is still
in good shape and working.
-
Color - the water in the fountain. This can be fun to try to match the
brides request. My light bulb under the fountain emits a yellow glow which
changes the way the color looks in your fountain. If she wants a pale pink
you need to explain about this problem so she understands You can't do
that. My fountain is several years old so maybe they have fixed this in
the newer ones. Rental - this is a charge that is not refunded to them
for using the fountain.
-
Out of town delivery - this is a charge for the mileage (one way) to deliver
outside of a 10 mile radius of my business.
-
Other - charges for bows, plaques, paintings and etc.
-
Bride's cake price is the total of her cake and the things above are added
on to this price and totaled into the next line total brides charges
Any questions so far??? If they don't want to pay for out of town delivery
- They can arrange for someone else to pick up the cake. Money is time
- out of town is
TIME

Explanations again..............
The shape? Square, rd, carved flat horseshoe to serve 100, etc. Icing?
Grooms cake icings I have been asked to do are choc. Buttercream, ganache,
rolled choco-paste, and chocolate fondant so I just write in the info
FOIL__ ? If a bride requests the florist foil covered board this is
where that info is noted.
FABRIC___? Most of my cakes are put onto fabric bases and I have several
colors. I write the color here.
GP IVY____? When I do cakes with strawberries some of the brides want
the gumpaste ivy to accent the strawberries. There is an extra charge for
these and this just reminds me to make them.
CURLS____? These choc curls are requested to use by themselves or with
the strawberries. I write dark or milk to remind me which flavor the bride
and groom want. Again there is an extra charge for these. The price depends
on how many curls they want. Piled on the top, scattered lightly in the
strawberries, and etc.
STRAWBERRIES___? This reminds me i need to buy the strawberries and
allot time to wash and possibly dip them in choc
CHOC___? I note here if the couple wants milk, drk, or white dipped
strawberries
OTHER ___? Tuxedo strawberries, plaques, paintings, and etc. And the
charge
DUE BY ___? The brides deadline to have her money to me paid in full.
CHECKS: That is the date I try to deposit the money in the bank.
At least two weeks before the wedding to allow it time to clear the bank.
If it doesn't clear you make a phone call and they must bring you cash
to cover this amount before you deliver the cake. I like this taken care
of before I make the flowers and bake the cake. If the cake is very detailed
and lots of gp flowers that date is one month before the wedding. If it
is basic with fresh flowers it is two weeks before the wedding.
Responsible person for cake order ____? Bride's, bride's mother or a
friend of the family - if you have a signature you have a valid contract
that is binding. I hope this information will be of some help to you.
We had talked about the business of cakes for several weeks and I thought
you might want a few detailed ideas of things to include on your order
sheets in the future
-
Dolores777: Pwd:::I'll see if I can work out those sheets and send them
up so all can read
-
(From Dolores): I'll post the above in the AOL Libraries under the CHAT
section as soon as I get it lined out. This must be in a TEXT format so
anyone with either a PC or MAC can read it. If it doesn't line up exactly,
I'm sure you'll figure it out. Pwd sure has shared a gold mine of information
here with us! I'm sure we all appreciate her hard-working efforts.
-
Dolores777: I had a bride who got BLUE coloring on her gown for coloring
the fountain! So I don't put the coloring in :::they do
-
Dolores777: I do something home dec. wouldn't do probably: I offer BUDGET
cakes
-
Cakestmper: I now charge for delivery outside my county, once went to Daytona

-
SLMacd: What is the best way to start working with gumpaste flowers - take
a class or on your own?
-
Dolores777: I recommend you starting with a Wilton kit $12.00 AND take
a basic gp class Its so fun
-
Cakestmper: Nicholas Lodge is high$$, but well worth the time and $$
-
Dolores777: Cake::he isn't for beginners
-
Pwd Sugar: HE is the very best teacher...... He is patient - and will help
you.
-
Dolores777: I would 'play' with it on my own first...fun
-
Cakestmper: I took my first gp class ever from HIM, learned volumes, hes
so nice
-
SpecBySue: remember you can make many decorative items from gum paste other
than flowers.
-
Dolores777: We also use a lot of fondant to make little items for everyday
cakes
-
JPine52625: who/where is Mr. Lodge
-
Cakestmper: Lodge in Atlanta GA, actually, he's in Norcross
-
SpecBySue: Nicholas number for Sugar Art Collection is 800-662-8925

-
Pwd Sugar: He has video tapes as well as books and equipment
-
CarolA5238: How should I decide what the correct price is for baking and
decorating?
-
Dolores777: Carol:::according to your local mostly:::we charge about 16.00
for a 9x13
-

on your cake? (Lace points, odd size pans, use of ribbon or pearls)" Dolores777:
