There are SO many simple little tricks to use if you only
knew. The new
1998 Wilton Year Book is here!
SCENERY CAKES - Scenery cakes are easy. And can be made for so many
occasions too. By 'scenery' cakes, I mean outdoor sceneries etc. For instance;
a cake for a hunter with (small figurines are available OR you could figure-pipe
it out of royal icing, shape from marzipan or gumpaste, or whatever. To
make a 'horse lover's' scenery: Lets say we have a 11x15 two-mix sheet
cake.

1. Its horses, so you need 'grass' a 'barn' and perhaps a 'stream of water'.
-
2. Ice the cake white buttercream icing.
-
3. BEFORE icing crusts, spread blue icing across the cake for 'water'.
Add piping gel over it to make a shine.
-
4. Spread green icing over the rest of the cake top. Have it piled a little
thicker near the stream.
-
Pipe some grass along the stream using tip 233 grass tip.
-
Add tiny sprinkle flowers and candy rocks.
-
(Sprinkle flowers-$1.45 and candy rocks-$1.19 are available at Sugarcraft
and other supply shops).
TIP: Its easiest if you add a few globs of green icing and spread these
out. This icing doesn't need to be smooth. 5. BARN - Use graham crackers
pieces to make a barn. Pipe the trims on the door with tip two...etc. Glue
graham crackers together with buttercream icing. Sprinkle cinnamon sugar
or brown sugar around the bard as 'soil.' (I use brown sugar). Add a 'fence'
of plastic or royal icing around the barn and place the horses in their
coral. Add a few 'trees' if you need them...or even other animals. 6. BORDERS
- For the bottom border I sometimes add simple white shells then sprinkle
candy sprinkles on before the icing crusts. A good top border might be
nice made with the 233 grass tip.
DOLL CAKES
My daughter makes a doll cake with a beautiful skirt. She ices the cake
thickly, waits for the icing to crust just a little bit. Then she uses
paper towels against the cake and pressing gently, forms gathers in the
skirt. This concept works great for Belle of Beauty and The Beast. SMALL
doll cakes are great for wedding shower cakes. Place them on a large sheet
cake with a garden trellis made of plastic or royal icing. Add a few sprinkle
flowers to liven up the scene.
FISHING CAKE -

1. Ice cake white, then before icing crusts, ice the lower third of the
cake blue for 'water' and spread piping gel over it for shine.

TIP: Nice if you spread this over one corner and running over the side
too...for a waterfall and then place icing or plastic fish coming down
this waterfall.

2. Ice the center part green and top third blue for sky.
(I like to add a yellow chocolate mold 'sun'). You can add a fisherman,
trees etc...maybe a boat. One more thing I like to do is add a purple 'horizon'
at the top of the green for realism.

CKATHYNOT: What happens when you download an EXE file?

MORE INFO: Many different things can happen. Most exe files would
run programs. Some can execute an install for new software....This one
executed that line into my win.ini file. It was very easy to remove ----
for ME. But for someone who isn't so familiar with computers, this could
be very bad news. I have reported this to the AOL - TOS and they are investigating.
WEB SITES - There are more web sites coming on every day. I have added
a couple of them this week. Kitchen Link is an especially great site. There
is SO much you can do there and SO much information available to you here.

I wanted to also share an incident with you - Last week
I did a wedding cake. On Monday I expect people to bring back my plastics
and setup material. Finally, today-Thurs., they brought the items back....dirty.
I had delivered the cake in good condition and I don't expect people to
bring back my plastics all dirty or molded. So we charge $10.00 per 100
servings to wash them. This woman said there was a death in her family
and she couldn't bring them back until today - dirty. Sue waved the late
fee ($2.00 per day) and asked her if she wanted to wash the parts or forfeit
her deposit. She through a big fit. Sue through up her hands and said NO
MORE, walked away. The lady took the parts and is going to keep them. (1
plate and 4 pillars that we had charged her $15.00 for). Moral of the story...<<<always>>>
charge a deposit worth the price of replacement. It also would have been
good if Sue had taken the parts before negotiating.

Dolores777: yes drago...I should, but she would have been too cheap for
sure

DragoDan: sometimes i feel it would easier that way COMMENTS: Drago is
right. Wish we could. But sometimes, especially on large cakes, they could
have $220.00 worth of plastics. This would raise the price of the cake
too expensive. But it IS a great idea for small cakes where only 1-2 plates
and 4 pillars are involved.

Dunkccc: They kept saying I was being idle too long and of course I was
almost done downloading.

TIPS: You can go on doing other things while downloading. This is
what you should do so you won't be idle. Another tip...set your
screen saver to not come on or make it not come on for the longest limits
allowed. NEXT, If you still have problems, you should write AOL and aks
for a solution. There can be bugs I am not aware of.
EARLENE'S PART: SUMMER -
WHEN WE WANT SOMETHING YUMMY AND FAST TO MAKE.
Drizzle on the cakes is something i get many requests for and it makes
the cake faster to decorate. Bake your cake, ice smooth and do a bottom
border of your choice. Now take about a cup of your icing and add 1 tablespoon
of water. Stir well and place in the microwave until it is hot and bubbly.
With a large spoon, drizzle this hot mixture on the top edge of your cake
and let it run randomly down the side of your cake. It smells wonderful
and gives you another easy way to finish your cakes. You can do this with
white, pink, chocolate and etc icing.

The color intensifies when the icing is heated. It will not be the same
color as the icing you have iced your cake with. Top the cake with a few
fresh strawberries dipped in chocolate and add a few more around the bottom
of your cake. Your guests will love you. This is the most popular grooms
cake that I do. This weekend we have three grooms cakes and they all have
the chocolate dipped strawberries on them. The side designs may vary and
they don't all have the drizzle on them but they love those chocolate dipped
strawberries. Heat the chocolate buttercream without adding the water and
it becomes an easy fudge mixture, when you just need or want a bite of
chocolate and there is none in the house. When the chocolate buttercream
is hot add a few chopped nuts and pour onto a plastic wrapped saucer, plate
or whatever. Chill and enjoy. It doesn't last long at our house.

To do the chocolate dipped strawberries.

Buy the prettiest strawberries you can find at the time. Wash and dry them
as close to the time they will be needed as is practical. For instance
if we have a 4 o'clock set up we will start doing those strawberries at
-
2. Melt your summer coating chocolate (milk, dark, white or one of the
colors).
-
This is the chocolate that is designed just for us to use to mold, make
candies and do this type of thing. It does not need tempering. You only
melt this chocolate to just above your body temperature. I have an old
gas oven with a pilot light in it. The night before we need the chocolate
we just place the container of chocolate in that oven and the next day
it is perfect to use. You can melt the chocolate in the microwave if you
are very careful. I just leave it in the unopened bag. Place in the microwave
for 20 seconds on high. Take out of the microwave and move it around. Place
it back in the microwave for another 20 seconds on high. Take it out again
and work it around. Just keep repeating this process until it is all melted.
Then clip off a corner of the bag and squeeze into a plastic or glass container.
Not metal - you can't put that in the microwave to reheat the chocolate
if that becomes necessary. Most of the time the chocolate is a little to
thick for dipping. You can use the paramount crystals or melt some solid
Crisco and add to the chocolate to thin it down. I can't give you an exact
measurement because it depends on whether you are using dark chocolate,
milk chocolate or one of the colors. Some are thicker than others. It doesn't
take very much melted Crisco. For other summer fun treats - slice apples,
dip in lemon water, dry and dip - dip banana slices, grapes, Bing cherries,
Rritz or hi ho crackers, and whatever else you think sounds good. Yummy
and easy. I gave you an easy frozen dessert for valentines last February
and it is such a good dessert to have for the summer meals. One recipe
will last all week for our family of three. It fills a 9x13 pan and you
only need a 2" square for a serving. Here is that recipe again.
FROZEN SALAD (OR DESSERT)
Cream together
3/4 cup sugar and 8 ounces of cream cheese with a mixer. Then add 10
ounces frozen strawberries (thawed), 1 15 ounce can crushed pineapple,
2 chopped bananas and 1 cup chopped nuts and mix well. Fold in 10 ounces
of cool whip. Pour into a 9 by 13 inch pan or individual bowls and cover
with foil and freeze. Take out of the freezer 30 minutes before serving
so you can cut it (in the 9 x 13" pan) Into squares. Re-freeze portion
not served for later use. Very yummy for the tummy

piping Or Fudge

Mr Kittle: How do you make tuxedo strawberries?

Pwd Sugar: I dip the whole strawberry in white chocolate - let it set up
- Then dip the right side and then the left side in Dark chocolate - Put
some of the chocolate in a small parchment bag or a bag with a small tip.
Pipe on the bow tie, buttons and lapel. I charge an extra 1.50 per strawberry
to do these tuxedo strawberries.

SueMabel: I'm confused from all my reading... what are the dimensions of
1/4, 1/2, & full sheet?

Dolores777: Bakeries do a full sheet, cut in half, then in half again...full,
half and 1/4 you see

Dolores777: BUT - half sheet is 11x15 I think....(YES- I checked at
work and this is correct). This makes it 30x11 and I don't think that
IS correct.

Pwd Sugar: Isn't a 1/4 sheet about 9 X 12 a 1/2 sheet is what we use as
a 12 X 18 or close

WatApple: How many does a full sheet serve? So the re aren't standards
for sheet cakes? All pans are different?

Dolores777: I think there are Wat, but I don't have the sizes info that
bakeries use. Perhaps you could do a search on some commercial bakery pages
and determine this.

Dolores777: Sue:::go by cake mixes maybe...One mix serves from 12-20

Dolores777: Half sheet...11x15 serves 30-40, 12x18 40-50 servings, full
sheet (4-mixes) serves 100-barely.

work for fondant or do i have to spend more money to get the double sided
ones?

Pwd Sugar: PETRO I use those wraps on buttercream, fondant, chocolate and
etc I have some of the double sided - but you can only use those with fondant
or gumpaste

SueMabel: Is there any advantage to using Wilton's color-flo versus thinned
royal icing for run-in sugar work?

Dolores777: Yes Sue...flo with egg white is stronger than just using course
meringue powder. Color-flo is better for lace points and many other fine
decorations. But color-flo won't be as apt to break
Dunkccc: I forgot, how long are the candy melts good for? ANSWER:
They are good for at least a year if stored at 65 degrees. But don't put
in fridge unless you are freezing. (Thaw for 2 days!). If they aren't good
- they still are....but they dry out and are thick, just add paramount
crystals until thin enough. NOTE: Candy Melts is a Wilton trade brand.
We carry merckens...taste better...easier to work with --- and always fresh.

(ANSWER)...doesn't make a difference in taste. But when you use
milk, PURPLE buttercream roses don't fade to blue as they crust.

club buys it for us.

- ICES convention Aug 7-10th - On my web site under AOL CHATS, I have added
the name tag which Pwd sugar created for you. <<Pwd --- I deleted
your name so all they need to do is fill in the space with their own. I
do hope this meets with your approval?>> All you need to do is add your
name below the cake. As Pwd sugar suggested, you should use a safety pin
so you won't accidentally stick someone when you do all the hugging. If
you have Netscape, you can click on the picture and save the image as...whatever.gif.
OR - print it. Using AOL, I think you can only make a printout. I tested
this and Pwd sugar has made it a very good size for you. NOW - all that
is left to do is to setup a special time when nothing else is scheduled...not
real easy. Pwd Sugar: At least we all know what to look for

Just ck ur little handbook that will be in ur registration packet. That
