Pwd Sugar:  Flowers are made, colored, taped and ready to go on the cake. Cake is decorated and grooms cake is done.  For a change I am ahead of the schedule

South. Mom wanted to teach me how to make pound cake... we bought flour in market and went and made the batter and put it in the pans and it rose and rose and spilled over. Mom's cleaning woman was there that day. Mom wondered what had happened. Willie look at he bag and (wish I could do the accent online) "Why, Mrs Brown, this is self rising flour, you don't need to add baking powder!)

Pwd Sugar:  I tell the brides that those little things that go wrong are what their memories are going to be made from at their weddings.  You don't remember all the things that go right. Just the things that go wrong.

Dolores777:  I did the cake once for a Kosher wedding -  yellow cake/raspberry filling/Amaretta poured over...butter icing - But maybe that’s NOT Kosher?

Dolores777:  I suppose everyone is deep into graduation cakes about now? We have SO many that we had to put up extra tables and still not enough room. We stopped taking orders for this weekend around noon today (Thursday).
CARJAR4:  Dol, I'm afraid to ask how many
Dolores777:  With our great new oven it is impossible. But my daughter Joyce does these cakes...I have enough to do in the office!
Dolores777:  CAR...whos counting...a hundred I suppose  - for the entire weekend. We aren't like a bakery...do detail etc...takes more time so we must cut off

can have some time to make something for ICES

Dolores777:  Kak...can your hubby or a friend take orders where they work? You'd get too many
Pwd Sugar:  I put an ad in a phone book last year.  Bad deal.  It was an expensive referral service.
Kakdecor8r:  he works with men, no women
Pwd Sugar:  I never had time to do the phone orders and sent them to the other decorators in town. I cancelled that phone ad this year.
Kakdecor8r:  I get most of my orders form where I work
Dolores777:  Kak...that is PERFECT! Get the guys to order cakes for their wives and he carries them to them
Dolores777:  We have a phone ad but only local...use to carry cakes to Cincinnati and all over and I. put a stop to that
Kakdecor8r:  he did that when he was in the navy, now the wives take care of it
Pwd Sugar:  But Kak those people will tell others and they will tell others and then your business may really take off
Kakdecor8r:  seems like they go in spurts
Dolores777:  summer is a slow time for cakes when you are just getting started.
Kakdecor8r:  have been doing them for awhile though. Last year was my best year so far
Dolores777:  We certainly could use another decorator in Hamilton the way we turned em down
JWGPKG:  Kak, now is the time to do some gumpaste flowers ahead!
Pwd Sugar:  Even after doing them for 40 years they still come in spurts. LOL

Pwd Sugar:  May to August is crammed and the rest of the year is sporadic.

Dolores777: CLASSES:  I flew to Pwd's town for classes last winter
Kakdecor8r:  I can't even get supplies here!! have to go to Houston or Austin
JWGPKG:  I think the trip would be worth it, especially when Nicholas Lodge comes to Texas!
Pwd Sugar:  But you can order from Dolores and that is at least better than it was before computers

Dolores777:  Kak...you hit a gold mine....once I found a real old book for $2.00 and the guy acted apologetic for charging me that much...
Kakdecor8r:  so did this lady!! It was in the bottom of a box of books, she didn't even know it was there

Pfirefly:  oh ok the most special I ever got was marshmallow flow and color flow

Dolores777:  figure piping is always handy to know
Pfirefly:  oh yeah did sugar Easter eggs that was neat. They come out very beautiful. But hard to keep for a long time
JWGPKG:  Pf - mine are lasting pretty well.  I have them in Ziploc bags.
Pfirefly:  will try that next time
Pfirefly:  have not done very much except for lollipops in a long time

JWGPKG:  Florida had a great DOS in January - I learned loads!  I bet Texas does, too. Yes, Florida has become a great place to learn. Florida has Mercedes Strawchsky!
Pwd Sugar:  Lucky Florida. She is one talented lady
Dolores777:  I hope I get to see her demo at ICES this time
JWGPKG:  When I saw her entries at Orlando convention, I thought - Who is this Mercedes?
Now I know!
Pwd Sugar:  I would love to have a class with her.

JWGPKG:  She's very earthy and funny to work with.

Chrismrisa:  Is there something I can substitute for Butavan?
Dolores777:  Chris...that is an emulsion...real thick and creamy. That stuff is like Creme Bouquet...emulsion is thicker and very strong
Dolores777:  if you use too much Cr B, it is bitter
CarolA5238:  I tried the creme bouquet in the white cake mix and tasted great. My customers like in the white whipped cream icing.
Dolores777:  I like that too Carol, not so sweet I think
Pwd Sugar:  Strong butter and vanilla flavoring.   I now have it available for you.
Kakdecor8r:  what does it taste like, dol
Dolores777:  it just wouldn't be the same to sub butter and vanilla I don't think
Dolores777:  don't taste it alone VERY strong. Pwd's icing is great with it
Pwd Sugar:  If you don't have it - that is all I can think of to come close
Kakdecor8r:  do you use it as a flavoring?
Dolores777:  Kak...this is what it is
Pwd Sugar:  Tasting it alone - bad idea - it is so strong it is bitter
Kakdecor8r:  but it has a vanilla/butter taste? Have seen it mentioned, but never knew what it was
Pwd Sugar:  I use it in flavoring all the cakes and icing. Strong vanilla/butter taste
JWGPKG:  Pwd - how much would you use per cake mix?
Kakdecor8r:  can you add to box mixes or just scratch
Pwd Sugar:  2 t. probably
Dolores777:  I don't think you can duplicate Butavan
Chef Nana1:  can these emulsions be stored at room temp?
Dolores777:  Yes Chef
Kakdecor8r:  i usually make my icing almond flavor
Pwd Sugar:  I don't measure it.  It is very thick and I just pour a dollop in.  LOL
Kakdecor8r:  how much to icing, 1/2 tsp
Dolores777:  I use 3 flavors....butter, vanilla and almond
JWGPKG:  I've used it in my icing, but not the cakes yet.
Pwd Sugar:  I did try measuring a dollop once and that was about 1 tablespoon.
Pfirefly:  I'll tell you one thing I swore by when I was doing heavy decorating. That was the icing stabilizer
Kakdecor8r:  add 1 tbsp for icing?
Pwd Sugar:  right about 1 tblsp for 5 lbs of pwd sugar
Kakdecor8r:  don't have a mixer that big!!
Pwd Sugar:  I even put Butavan in the flavored cakes such as the Kaluaha Fudge, lemon and etc.
CarolA5238:  I got try that Kaluaha Fudge cake sometime, I bet its great.
GOOO8:  The kahlua cake is quite delicious.

Kakdecor8r:  yes, but printer was not working, have a ton to print now! LOL I like to print and keep with my cake "stuff"
Dolores777:  Kak...can save to file too...Just copy/paste -I'd run out of paper LOL
Kakdecor8r:  my hubby gave me an old tool box of his that has drawers got all my cake stuff in it!! I put contact paper inside. But I still have some overflow!!
Pwd Sugar:  I had to move my work area into the other room and did the same thing Kak. I am finally getting used to having it in there.

Cakecherub:  Dol, on those cakes in a jar on your website-can you just use a mix??
Dolores777:  of course Cake...use the heavy carrot cakes etc, not DH
Dolores777:  I make a box-mix carrot cake...just doctor it up with more
spices and more carrots and nuts

MAMATENN:  working at it. Can't wait for convention !!!!

GOOO8:  I have been tracking down lighting info for the Convention Center. They have mercury vapor lights. I called the camera store to inquire and learned there are a couple of diff. kinds of mvl's.
Dolores777:  why GOOO? are those bad lights
GOOO8:  No, am still learning, just wanted to have the proper film speed. Have heard 400 and others say 800 now with these lights I may buy a filter. I don't know all the specifics as I have to call the guy bk at the conv. ctr. to find out what type of mercury vapor lights they are
Kakdecor8r:  Walmart had disposable camera for $5.

Pwd Sugar:  Copyrighted pictures even from color books should not be sold.
Pwd Sugar:  You can do them for your family and friends legally as long as you don't charge for them
Kakdecor8r:  oops, that's how I usually get them on cakes, but what if they give my money in "appreciation"

Dolores777:  I counted how many frosting sheets I've printed just for one company today...237 pictures. More really, sometimes one person gets 2 and I didn't  count that. I make about $4.00 clear on each one. Guess my KopyJet has  paid for itself! But I want the large one. It prints 11x17 sheets.

Pwd Sugar:  Sort of an edible image that sounds more edible than the old rice paper images
Dolores777:  I could already have bought 2-3 more printers with the money I've already made

Dolores777:  Ising...Krogers sell them for $7.00 too...probably because they called us LOL

Pwd Sugar:  Dolores is the only one I know of that has one.  So she will have to tell you.
Dolores777:  Pf...is a simple printer...deskjet...print on edible paper with food coloring
Ising C:  foodland will do the images, but you have to buy the cake also from them
Ising C:  but celebrations is selling just the print out for 10
Dolores777:  Ising...way with Krogers too. We sell them for $7.00 via mail order and about $2.00 poastage. Cheaper Ising C!
Ising C:  she just got the machine this week and the next morning did 6 sheets

Kakdecor8r:  I got one at an auction, but its missing the lens
Dolores777:  YES we sell parts...they are listed

LauraJMD:  I have an airbrush question......Any preferences?  style..model..etc?
Dolores777:  YES - The AIRMASTER...hands down, no contest
Kakdecor8r:  have only used my airbrush for backgrounds
LauraJMD:  Dol..does Wilton sell the Airmaster?
Swtelegnt:  I prefer the Aztec air brush
Dolores777:  I LOVE my Airmaster. The pressure couldn't be easier to control
Kakdecor8r:  have used regular coloring in water, is that wrong?
Pwd Sugar:  Isn't the Airmaster the compressor?
Dolores777:  Kak...never use anything in the airbrush but airbrush color...will be all gummed up
MAMATENN:  You need air brush colors
Pwd Sugar:  Kak you need to get the coloring specifically for the airbrush.
Kakdecor8r:  have always flushed well with water
Dolores777:  when it gums up you have to take it ALL apart and soak and clean it
Kakdecor8r:  even with the Wilton coloring?
Dolores777:  Kak...only the very thin airbrush colors
MAMATENN:  Wilton doesn't have air brush colors
LauraJMD:  How do the airbrushes rate that are sold in the Wilton Yearbook ..pg 113 of '99 yearbook?
Dolores777:  over priced Laura. And not one bit better than Airmaster!
LauraJMD:  Dol..besides cost..how do they rate re. quality??
Dolores777:  same as KopyKake's Airmaster- no better. Wilton just lives on their name since they are the only company most decorators even know about…welll. ..until we got the web LOL.

YouGoSteph:  it is a mixture,.,. of rum...water...and corn syrup. I think it helps to hold i the moisture
Dolores777:  You...why mix rum with water???? It is better if 100 proof for best taste
Dolores777:  same thing...I pour it...on the bare cake 100 proof is all that really makes a good flavor.

JWGPKG:  I think it's a Spanish-type of technique.  They also use it a lot on Hispanic cakes in Miami. It was pretty good - very moist, but also very sweet.

Dolores777:  yes MAMA...I have used that too...poured a fifth on a 16-12-9-7 and it was not soggy
YouGoSteph:  no...not really for the full affect of flavor....just moisture
Swtelegnt:  steph, since you have the restriction of kosher, you really should talk with the person that will be doing the cake. to see what they advise is best.

JWGPKG:  Depends - some go for much more - especially in NY! A lot depends on region you're in.

Dolores777:  here too, but NOT for rolled fondant with curtains or lace points
