Rather than paying so much for another mixer why not get a 12 qt. bowl that will fit on your 20 qt. mixer? You should be able to get one through your Hobart dealer. I had one and they are wonderful - and MUCH less expensive than another mixer.

but I think I can get a better deal. I have alot of confidence in these
mixers because of the good name and quality. It is also very easy to
find used and new parts since the Hobart company is still around . The
machines are heavy duty and can lasts a long time if well cared for.
Also I have been told that they aren't very complicated to work on.
Tammy sure did get herself a reallllll good deal on the 30 quart Hobart
mixer. This is my personal opinion but I would not trade my Hobart for
anything else!!!

If it can't go in the dishwasher, I don't use it.

Of course, I don't do cakes professionally, but for an enthusiast, I
seem to do a lot of cakes. (One or two a week, which is fine with me,
and a lot of fun).

I've put rounds and shaped/character pans in the dishwasher. The only
problem I've had is that sometimes the pans don't get entirely clean.
If that's the case, then I just quickly wash by hand, but most of the
work is done. Of course, that may be due to our apartment dishwasher,
which generally gets dishes dirtier than they were before. :P

1) In terms of magazines, the only other (American) publication of
which I am aware is the ICES newsletter. Are you an ICES member? If
not, you can find membership info and some old newsletters at the ICES
website, www.ices.org

2) The Alabama ICES members are having a Day of Sharing on October 18,
in Muscle Shoals, AL. You don't have to be a member to go, and you are
sure to meet plenty of other Alabama decorators there who could share
some tips with you. For more information, contact the ICES state rep,
Dathern Moon at 256-536-2629, or Dawn & Jimmy Czermak, hosts of the Day
of Sharing, at 256-766-0001. Even if you can't go, it would probably be
worth a phone call to one of these people to see if they can steer you
in the right direction.

It takes one 3 volt lithium battery that cost about $5 each. I also got a one-year extended warranty and after taxes, etc., the camera cost about $315. What helped us to decide on this camera was the favorable rating that it received in Consumer Reports. (Their rating was for the Olympus Stylus Zoom 110, but for another $20, we decided to go ahead and buy the Olympus Stylus Zoom 140 because of the longer zoom lens range.)

I think you've made the right decision to keep your KitchenAid Ultra Power mixer. I've had mine for a couple of years and I really love it. The only thing is, however, I've noticed a little bit of oil seepage underneath near where it spins (up in the groove/rim). I e-mailed KitchenAid and they assured me it was from (1) lack of use, or (2) that the mixer had been tipped or been upside down. My mixer has not been tipped or upside down though. They also assured me that the oil is food safe and that the oil pack will last 10-15+ years. I have noticed less seepage lately because I have been using it more. If I had the countertop to kitchen cupboard clearance, I would have bought the heavy duty mixer. But since I didn't have the clearance space, I bought the Ultra Power. I make bread, mashed potatoes, etc., in it without any problems. Also, Consumer Reports also rates the KitchenAid stand mixers very well too.

started doing cakes I think I had a Sunbeam or something like that and
every week my husband was taking it in for repairs. The repairman asked
him what I was doing and my husband told him making royal icing. He
told my husband to tell me to get a KitchAid. That is one of the best
investments I ever made. If you watch the sales you can get one for
about $200.00.

I burned up a Sunbeam a few years ago in the middle of a wedding cake!
I replace it (in a pinch) with a Hamilton Beach 275 watt. That mixer
is still going strong for me!!
However, for larger cakes I have a Hobart. Please don't completely
disregard the possiblity of getting one: I placed an ad in a local
classified paper just on the chance of finding a bakery going out of
business, and a church in a neighboring town happened to have a table-
top hobart they never used and were tired of dusting. I got my
beautiful life-saving Hobart for !!!! $75.00 !!!! Of course I had to
build a stand for it with heavy-duty casters so I could roll the ugly
thing out of the kitchen when not in use, but with the money I saved on
the mixer, that was a minor expense. Good luck finding a reliable
mixer!

I have both an unautographed first edition and an autographed fifth
edition (they have different covers, and I got confused and bought them
both within a couple of weeks on e-Bay). I paid somewhere between $15
and $20 for each--can't remember exactly.

With e-Bay, it kind of depends on how many people are selling the book
at around the same time and how well it is described. But, I've seen a
couple of different versions of this book on e-Bay over the last 6
months, and, generally speaking, I think you're looking at about $15 or
so. I don't think the autograph is worth much, to be honest.

Becky, I made a Rugrat cake several months ago, and used 1/2 sheet
cake size. I got pictures out of a color book, and enlarged them, and
put them on the cake. I traced them on a piece of wax paper, then out-
lined the wrong side of the design with colored piping gel, and put it on
the cake. Then I used colored frosting to fill in, and patted it down
with my finger and corn starch. I had Chuckie, Tommy, and Angelica,
along with the Rugrat logo. Turned out great. If you can't get the pan in time, you may consider this idea. Good luck!

Hi Dee, As far as I can tell, it has nothing to do with anything that
you've done. This has happened to me on two different occassions in the
last month or so. I didn't do anything to make it start and I didn't do
anything to make it stop. Basically you have to deal with it for about
a day or so and then all of a sudden it will start changing colors for
you again. Sorry I couldn't be much help, but this has been my
experience to date.

The problem might be caused by having the history (that keeps a record
of all of the pages that you have opened on the internet) turned down
to keeping 0 days records. I was messing with my computer the other
day and I turned the # of days to keep the pages in the history file to
0, when I did this I noticed that none of the messages were changing
colors for me either. Now I have it set for 3 days, this gives me time
to keep up with the messages but it doesn't take as much space in my

directions. Maybe your teacher will copy something for you to keep. I

The way to do it on Microsoft Internet Explorer is to go to the view
button, then hit the internet options button. At the bottom of this
page it says history, and it says "days to keep pages in history" with
a little scroll bar that has the numbers from 0 on up to whatever. If
your number on that bar is 0 or very low, it won't make the messages
change color at all if on 0 or it will just change color for 1 day or
whatever the amount of days it is set on. If it is set very low, raise
the number of days that you want it to save the pages in the history
file, based on how often you visit Dolores' message board. If you go
often, you could probably have it set on 3 days, if not very often, I
would have it higher. This will use space on your hard drive, so set
it as low as you think you can. I hope you can understand what I
mean. Someone else will have to explain for netscape users. Mindy

I too am a WMI. There is a tiered cake assembly class. It's not the same as the course III. It is just a project class, held over 2 or 3 sessions. The class is not held often because (1) lack of student interest, (2) the store doesn't carry all the necessary supplies. Talk to your instructor, tell her of your interest and maybe she will do it. Wilton has set their classes up in three 4 week classes. Basic,
Intermediate and Advanced. A total of 12 lessons. You do get a work book
with complete instructions and pictures every 4 weeks. A total of 3
books.

The wedding cake is taught in the last 4 weeks of class.

satin tablecloth on the table. You can use some flowers and bows on the
corners matching with the cake decoration. I've used about 50 yards of
tulle to look beatiful (depending on the size of the table, my skirt
fits on tables around 6ft). I charge about US$30.00(rental). If you add
two or three candelabras, a cake knife and glasses - then it could be
rent for US$80.00. Hope this help you.

About 6 weeks ago I was decorating a cake and the Wilton feather weight bag split down the seam. Yesterday I was cleaning up from doing a cake and noticed that one of the feather weight bags was coming apart at the seam next to the tip. Both bags were fairly new (they weren't all stained yet!!!) so I'm wondering what happened. I clean them in hot water, Dawn detergent and a little amonia - no boiling. Anyone else have a problem with these decorating bags???
Also, just a hint. When I need just a small amount of icing in one particular color, I hate using a regular bag. I found the 8 oz. size of Gerber disposable bottle liners works great. They are heavier than sandwich bags and hold a small amount of icing. Just clip off a corner, drop in a coupler, add the tip and ring. Best of all it is disposable and I got a bag of 150 at our local dollar store for only $1.00! They also come in the smaller 4 oz. size but they are a little small to work with for me. Anyone else try this????

I have never heard of this happening. I have had my bags for years. It could be that you have some from a faulty batch. You could call Wilton and tell them. Wilton Instructors have a quality control form to report any faulty goods. If you know one tell her about them. I hope they will replace them for you. They're too expensive to only last 6 weeks.

On E-Bay next to the sellers name is a number (56). This number
represents comments that other buyers have put out there for you to
read. If you click on the number, the comments will come up. Anytime
that you are dealing with someone you don't know and even when you do
know them sometimes you run across a bad egg. Read the comments and
hopefully all will be Okay.

This actions is very upsetting for me !!!!!! There have been times
where I wanted an item VVVVVEEEERRRRYYYYY bad, and someone would come
along and outbid me less than 10 seconds before the action was over.

I buy 4 twin sheets when they go on sale (200 thread count) and use them to make skirting. I have my own table which is 5' long and about 30" wide. After washing the sheets to pre shrink then I put 1 shett on the table top and draw around the edge with my disappearing ink quilters pen. I cut it out leaving about 1/2" for a seam allowance. Measure the height from floor to top of table, add about 3" for hem and 1/2' for seam allowance and cut strips lengthwise from the remaining sheets. You'll need about 2 1/2 times the measurement around your table. I have a gathering attachment on my sewing machine but you could make a small pleat every inch or so. After sewing gathers, stitch top and sides together. I love being able to throw it in the wash (Biz takes out the grease stains) and it's all in one piece and so quick to put on the table. The whole thing costs less than $20. I made a pink one and a cream colored one. I use an ivory colored lace topper over this. Best wishes, Kay

have many algeries and do have to be careful w/what i choose. many of
my bags last 2-5 yrs so i really doubt dawn is as bad as you say.

dawn dish washing product. I am a Wilton teacher (15 years) and I have
never heard that they recommend not using dawn. I even live in the
Chicago area not too far from their corporate offices. I have hand
washed all my equiptment (except candy molds which can dull) all these
years using dawn without any problems. Do you have any recommendations

try going to the internet options page again(where you changed the
amount of days). At the bottom of the page it says colors, click this
button and a new box will come up. It will say links and have a
visited and unvisited button. You should pick 1 of the colors for the

You might try using the disposable bags. I have some that I have been
using for over 2 years. I don't throw them out. I wash them just like
the regular bags. Eventually they go bad but they do last for a very
long time. I've used the wilton and echo disposable bags this way. I
don't do that many cakes yet, but for them to last that long, I think

I forgot to tell you that my underskirting is plain white cotton polyester broadcloth that covers the top, front and sides and hangs down a few inches in the back. Where the table edge is, I have velcro. Then the lacy tablecloth is the skirt part only which also has velcro on it and I can zip these 2 pieces together in a hurry. Then the top lacy piece goes on and covers the edges of the skirting. I have skirting to fit both 8 ft. tables and also 16 ft. where we put 2 - 8 ft. tables end to end if the cake is spread out any at all. I don't like a cluttered table.

I cater weddings so I have everything to do wedding receptions with such as punch bowls, candlelabras, mint/nut dishes, cake knives, toasting glasses, real crystal plates and cups, stainless forks, etc. I use a lacy look polyester skirting that I had made. It is white. Then I use white under it and have a separate piece that goes over the top which is also the lacy look. Then I do bows at the corners and sometimes greenery swags on the front. I think an all white table gives a nice elegant look and then use the color in the bows, mints (I make my own) and punch plus the flowers on the cake. When I cater, I get $3.25 per person which does include the cake. It does not include the napkins, cake topper, or real flowers if they want. That is on a guaranteed basis such as they tell me to plan on 200 so I get paid for 200, not the 100 that maybe is all that shows up. They take home the leftover cake, punch and mints. Very few people offer this service, so I have all I can handle most of the time as some don't have the time or the want to to be bothered doing it. When I do the cake only, there is nothing I hate worse than setting my cake down on an ugly paper or plastic tablecloth. It just seems to cheapen the whole effect.

I want to tell you the kind of straws we use with great CONFIDENCE.
They are made by CARNIVAL - 250 to a box and they say 8" x 1/4". If I
were any of you I would be leary of using fast food straws because of
their strength. The straws we buy we get at Shoppers Food. Giant and
Safeway do not carry that brand around where we live. A box of those
straws is less than a dollar. Hope this helps you who are having
trouble using straws. We use those straws in every size cake we bake.

I've had really good luck buying stuff like cake decorating books, cookbooks, and cake plates (I also collect these). I've only had 1 item that wasn't what I expected, but it was only $1+ so I decided it wasn't worth haggling about. A lot of the people selling have businesses and get rid of stuff they buy at estate sales, etc. I think it's a great place to find what you want and bid on. Usually, if I want an item pretty bad, I will leave a maximum bid up to X # of $ that I will give and that way if someone else wants it, they have to bid until they bid over me. I was leery of that at first, but it only moves up in increments of 50 cents or whatever they say it does. No worry there. I have gotten things for less than the maximum I've bid. Happy hunting!!! For more cake items than just Wilton, you might want to search under "cake" but be prepared as there is usually about 1600 items and it takes awhile to go through that many!!

You actually staple the tulle to the table? I wouldn't dream of stapling in to some of the nice tables we have at the reception halls and churches in our area. We use a lot of tape.

Hi Suzanne, I've been bidding on eBay since the end of July and have
won approximately 100 auctions. (I've gotten a little carried away!!)
In all of those bids, I've only had a couple of bad buys. I bought a
set of books that were a lot older and in much worse shape than the
seller had represented. I sent him a very polite e-mail and he
responded promptly with an offer of a full refund. Another instance, I
purchased an old wilton yearbook and when it came there were pages
missing (all the wedding pictures). Again, when I notified the seller,
she promptly offered to make good on it with a full refund or another
book to replace it. To date, I am still waiting on a book that I paid
for in September. I contacted the seller who is out of town, but I
expect her to make good on the sale, also. Have fun bidding!

Most certainly you can get by cheaper than the price you quoted. I know
a lady who always offered this service. She rented the table and the
skirting (and several other items too). She made a lot of extra money
picking up the real flowers and delivering them also.

Skirting I do: Using paper or plastic backed tablecloths, drape
over the side to the floor and tape on the table top. (They won't
cover the top too). Then, drape paper tablecloth over the top...2 most
of the time. Now, through tulle or netting...brides colors maybe...over
the entire table. It is 3-fold, so reaches to the floor in the front and
over the back. I leave it too long on each side and pull it crinkled
PINNING a bow on. You could also add a gathered piece of netting and
gather that up with pinned on bows...in bride's colors of course.
This idea is not re-usable. But you can also buy real cloths. You'll
need netting in many colors anyway if you accomodate many bride's
colors.

I don't think the bags were defective. Odds are maybe one would be, but
not 2. I have never in all my years, seen a defective Wilton
Featherweight bag.

Teachers have been warned NOT to ever use Dawn detergent and I think
this is the culprit here. Besides eating up your hands, the bag and the
finish off candy molds, our plumber also told us not to use it because
it stops up the plumbing too. We had been using it...and come to think
of it, going through decorating bags faster too. We had a major stop-up
and he told us it was because of the Dawm detergent.

Hi Emily

Oh, I see. No - books don't come with any of the Wilton Mini classes.
Some teachers may copy something for you on the copy machine. And even
IF offered they don't fill anyhow. I do a more complete wedding class in
my course 3 than most teachers. My classes are for 2 1/2 hrs rather than
2 hrs as wilton recommends, so I have more time to do the 'little'
things. In the 11th week I decorate a complete wedding cake in front of
my students. Then, they really can understand how it goes together when
they do their own the last week.

To explain: (My classes are for 12 weeks too, not the usual 4). And I do
give each student a wedding cake book, plus another...we have a big
drawing the last week when they graduate course 3. I'm an 'independant'
(own my own shop) so I can do things Wilton teachers that work for other
stores aren't allowed.
