I also enter "dummies" at cake shows,like Dolores, so I can have a
display cake at my shop; I can't see spending all that time, effort and
expence in putting a show entry together and not using it for something.
I've even lent those displays to other shops --( I call it my "cakes on
tour"). As far as judging by personal preference, that is one judge
that I would NOT like to have at ANY show. When I was invited to judge,
I tried to approach each cake with an appreciation to the WORK ,and art
involved and NOT in if it was my favorite color or technique. That
would have been a dis-service to the person who entered that particular
cake. For example, there was a cake entered in the master professional
cat. that I know for a fact was NO real work for the decorator, true
enough she had all the decorations placed nicely on the cake but there
was something lacking. It was a cake covered in rolled fondant, and
using the Wilton wedding press-in molds fondant molds, attached these
decorations all over the cake. Now, for those of you that have worked
with RF, know that once you master the technique ,it isn't that hard to
do, also it doesn't take a great deal of art to press fondant or
gumpaste into a 3-D mold and have a pretty decoration ,you basically
have to be neat. There was another cake there that was completely
decorated in royal icing,a lot of work went into that cake , and another
cake with a gumpaste baby, Just head and hands that were also pressed
into a mold, dressed in a pretty dress on a royal icing cake with side
garlands,also very "neatly" done. I was trying to point out to the my
co-judge that the royal icing cake had more "work" into it but I
couldn't press my point being a only a junior judge ( I tried!); But, as
far as I'm concerned that one was the winner.( I could SEE that cake in
buttercream)(sometimes these entries border on the fantastical!) There
was another incident concerning an airbrush cake, that I can go into but
I've already taken enough of you time.--( I think that out of 80+
entries our disagreeing with 2 was not bad!)-- What Carolyn( and I) are
trying to point out, is that YES, maybe there should be a buttercream
category in the shows and I feel that we should all take a chance and
enter it at least once to see how we do! We just may surprise ourselves!

Do you have to be a member of ICES to attend the DOS in Columbus? I'm just starting out, have really just been taking classes and making cakes for friends and work. Not sure if I plan to do this as a "business" yet or not, but I'm having lots of fun! I'm interested in this DOS, but wasn't sure if I could attend if I'm not a member. Last weekend was the Michigan DOS and we had a representative from
Rich's demo Bettercreme. WOW did I learn alot!! Anything you can do
with buttercream she did with Bettercream. It also can be left at room
temperature for 5 days without spoiling! If anyone has never tried it,
I would recommend that you do!

But, thanks, its good to know that it won't hurt us to leave it set out.
When we use BETTERCREAM (either vanilla or chocolate) we do the cake the
same day they pick it up because the icing seems to evaporate and appear
thinner as the cake setc. But I'm not complaining - its the BEST! Not so
sweet like our buttercream

the "jumbo" size flowers in Bettercream.

Subject: Conflicting DOS events
I love to go to cake shows and Days of Sharing, and I'm annoyed that
later this month, there are two days of sharing in my area on the same
day. Both Maryland's ICES and Virginia's ICES are on Sunday the 26th.
Since I live near DC, it's just a few hours drive to get to either, and
would have loved to attend both.
My advice, if you live in a multi-state area, check with your
neighboring ICES chapters (or try to get their newsletters, or
something) and try not to hold competing events. Most of the folks I
know would gladly attend shows, competitions and days of sharing most
anywhere within several hours drive!

Perhaps those dates were set by reps who don't live so conveniently
close like you do. Its very important that you point out your problem to
them so they can correct it in the future.

Ohio has had the SAME dates ever since we started. Other states can work
around our dates better when they can depend on this. Ours are always
held the last Sundays of April and Septembler...dates I started waaay
back when I was rep so many years ago...glad it worked so well, you
never can be sure.

Anyone know of states holding 'regional' DOS? If you don't know, Ohio
went together with 5 other states recently for a great DOS. Over 200
people came. We had trade booths and demos all day long. This is a nice
attraction for authors and other pro demonstrators too.

Actually, we are hoping to (successfully) hold a "Weekend of Sharing" in
Virginia late next Spring (or was it in 2 years? I forget), and invite
folks from Virginia, West Virginia, Maryland and North Carolina. I'm
sure we'll discuss plans further at our DOS in a couple weeks. It'll be
the same year that the ICES convention is pretty far west, so we figure
us "East Coast" folks who will skip convention that year would still
like to have some event to go to. It's in the VERY early planningstages
at this point, but if things become more definate I'll certainly post
it!

Dummy cakes tend to have a much nicer look to the finished product than a real cake. Tend to; not necessarily always do. I have seen incredibly beautifully done cakes in real cake and with basic techniques.
In the case of Carolyn's cake getting third place because the judge didn't consider the cake on the level of professional. I've seen Carolyn's cakes and I think that there is no one who can frost and decorate a buttercream cake like Carolyn does. Her work is beautiful. I would have given the cake a second because even though I wasn't there, I do know Carolyn's work. A judge needs to have sensitivity when judging so not to hurt someone's feelings with the final result and to be very fair. I believe that a judge needs to really think about skipping over a place in awarding placement. Carolyn's royal icing cakes for shows are top-notched! It's very difficult judging and not being critized for the final result. No one is perfect. I take alot of time judging and always tell the judge/judges that I am working with to let me know if he/she is dissatisfied. If the co-judge is dissatisfied that much, then she needs to make it known. Sometimes, a judge just has to go along with another decision. That is the reason that it is best to have three judges. One always breaks the tie and creates more feedback for discussion. It works out so much better having 3 judges.

We did a weekend of sharing once with 4 other states. It was extremely
successful. We had a nice banquet on Sat. night. As I remember, it
wasn't all that expensive. Everyone pitched in.

Our last Spring's DOS was with 5 other states. It was spectacular - 2
days. We had about 200 people. Demos all day each day.

Hi Mindy:

Yes, I am a Missourian - in fact, I was the one who organized the Missouri ICES chapter in 1983. We'd love to have you come as a visitor and no, you do not have to be an ICES member, but we hope you will like us well enough that you will want to join and come again and receive all the benefits of being in ICES. I am a charter member and it truly has been one of the greatest things in my life! I have grown so much as a person and received so much benefit from knowing other cake decorators.

As to what goes on - there will be demos from 9 until noon, I believe, and then lunch and then a business meeting. Then there will be more demos. I do not know what the demos are, but I will try to find out if you will remind me in an e-mail. We also have a sharing table where you can bring anything you'd like to share - perhaps a cake you've done for a cake show or for whatever, cake pictures, etc. Then to help our Rep and Alternates go to the Midyear ICES meeting and ICES convention, we have a white elephant sale. You can bring anything you'd like to get rid of such as pans, books, small garage sale type things and the money raised goes to the Rep fund.

When you arrive, you will sign in and be given a name tag and then we usually have coffee and rolls to get everyone started and the visiting begins. Some of us from the Kansas City area are planning to go down on Saturday and stay overnight. I would love to meet you there and I could introduce you around. I'm sure you would agree that you got $20 worth of friendship and knowledge from the day when it is done.

Please come. Anyone else that you know, please invite them, too - they also can be out of state people, not just Missourians. In fact, I think a couple of the Kansas people will be coming with me. We'd love meeting you and having you as our guest!!

Our DOS was yesterday. It was wonderful! I bet there were 200 people
there. Millie Green came (pres of ICES). Also several decorators from
West Virginia. I met Carol Ising...a friend of mine on the
computer...clear back in Prodigy days...when we were all on there.

Colette Peters demoed a rolled fondant cake...how to drape on the
icing...she prefers Regalice fondant mix. She showed many good ideas for
decorating the cake easy and fast. I'm really glad I saw that one. She
adds lemon extract to gold powder ...it evaporates fast. She doesn't
bevel the top edges of cakes before putting on r.fondant icing. on & on!

Susan Aviram: demoed sugar molding. Had LOTS od samples! She showed one
I especially liked...a med. egg with the cut-out as large shutters -
blue with a white cupid inside and scroll deco.

Sue Larson (expert with pulled sugar also) showed how to make the cloth
cake base coverings. Its really easy...Use polyester cloth so it is
shiny and washable. Sew a length of cloth about 1 1/2 feet wide into a
circle. Fold and insert elastic all around. Then fit around a cake board
and set the cake in place.

Dave Phillips showed us how he makes plexiglass cake stands for display
cakes. He makes the box (bottom still open), uses Liquid Bond Glue and
smooths after dry with a torch. Clean the plxiglass with rubbing
alchahol. Sets on stand of white plexiglass, 2 psc, one large and one to
fit the box and uses set screws to fasten once the cake is in place. He
sells a 16 " box for $100.00 - I think their web site is cakecraft.com

Sherry Orndorff: Another demo was about the little wedding charms people
insert into the cake and how/where to get them etc. I didn't see this
demo.

easily for DOS and to let new members know about ICES. If you are a rep,

Yes, Colette is truly awesome. I liked her idea of using half gp and
half fondant to make flowers for her cakes. Hadn't heard that one.
