I created this cake for the baby shower
when my first grandchild, Christopher Phillips, was born.
When I decided on the "message" it must
have been ESP. "Look Out World, Here I Come," has held to be SO
true!
Chris is now in his 3rd year of college
and Air Force ROTC (2002). He is a computer "nut" - he created his own
web site then also created one for his Air Force squandron recently.
(And actually, it is thanks to him that I learned enough about that to
make my own web site.) I taught him, then he taught me!...UPDATE! He is
graduating May 3, 03! He is such a good boy! I'm so proud of him!

Horseshoe
Pan Cake (one end of the cake will be discarded)

ROYAL ICING DAISIES-MY WAY: Use
tip 101, stripe bag with darker colored icing, (not straight food coloring).
Starting in center of nail, large end of tip on the nail in center, move
out to end of nail, turn nail slightly counter-clockwise (if you are right-handed)
and move back to center. IMPORTANT: The large end of the tip MUST be touching
the nail. In the center, apply very light pressure or you will get a thick
build-up of icing that you won’t like.
-
TIP: When making royal icing
flowers on a nail; I apply a very tiny glob of Florist Clay to my nail,
instead of icing. This allows my wax paper square to attach firmly. I never
need icing for glue and its much faster. (We sell Florist Clay - a strip
for $.30). Will last a long time. You don't need an entire pack. It would
dry up long before you used it all
-
COLOR-FLO CLOUDS: (See pattern)
Free-hand several ‘clouds’ on wax paper - no outlines, dry overnight, fit
them on 8" cake after you have added the borders.

WHITE CHOCOLATE BABY Using Baby
Candy Mold #90-9801: Paint coating chocolate of appropriate colors into
baby candy mold, fill with one solid color; chill and unmold. Plastic baby
with wings IS available if you don't want to make it out of chocolate coating.
CARDBOARDS AND FDA FOIL FOR COVERING
THE FULL-SHEET CAKE: Place two or three 25x18-inch cardboards together
for sturdiness. Make a pattern for all 4 and cut corners rounded. TIP:
We put 2 cardboards together with a slightly smaller one between them.
This is more sturdy. Cut up boxes aren't nearly as strong as regular cake
cardboards, also.
DIRECTIONS:
1. HORSESHOE CAKE: Trim one end off
the horseshoe cake and place on the cardboard. (You'll need to pull
the horseshoe cake a bit straighter and fill in the cracks). Ice the
sides, smooth with blue icing. Write your message: "Look out world, Here
I come". Pipe tip 228 bottom border (like you do star fill-in). Pipe tip
19 rainbow rows of shells.
2. WORLD CAKE: Place the "world" cake
on the board. Ice smooth blue. Draw the USA (see pattern below)
on with tip 3 black icing. Fill in tip 14 stars.
3. 8-INCH CAKE: Set on 10 inch top separator.
Ice smooth. Airbrush blue, darker towards the bottom. Pipe tip 1 embroidery
free-hand stork (see pattern), pipe baby and flowers. Pipe tip 228 bottom
border. (You can add tip 1 or 2 stringwork on the 228 star, if you like).
Pipe tip 14 rainbow shells in circles for a rug and add tip 233 fringe.
SETUP
Place color-flo clouds behind the baby.
Place a 10-inch separator plate on the
cardboard, gluing it in place with icing.
Place royal icing daisies on the plate
and pipe tip 352 green leaves.
Add 4 pillars and the finished 8-inch
cake
TIP: If you have an airbrushed, to
spray on the blue, the cake will have soft-to-deep shades of blue. I also
airbrushed the smooth sides of the horseshoe and the world cakes.
