PAINTING WITH ICING 10-10-00

Usually when we say we are painting on icing, we just knife stripe over the other color. Long before I had an airbrush I painted my cakes with nice outdoor scenes. For instance, if I wanted to make a 'hunter's' cake, I iced the cake white, then before it crusted, I 'paint' it (using a small angled spatula). Start at the top: blue, then add a horizon, usually dark purple (may like to use a bag with tip 5), then green 'grass.'. Or also maybe a stream of water angled across the cake (then I don't do the sky...no room for it usually).

Tip: spread blue piping gel over the 'water' to make it shine realistically. Often I add hunter figure with his dog and artificial trees.

Don't forget your #233 tip for making 'grass' and candy rocks for realism! I've cut the rocks in 2 pieces. They ar pretty large...and this makes them go farther. I always liked to add the tiny sprinkle flowers too. The cake is pretty plain, not many colors, so the tiny flowers really add something.

Of course, if you are lucky you will own an airbrush to paint with. I totally prefer the AIRMASTER. I can even paint gumpaste flowers with it. An airbrush allows you to be so creative in so many ways. Sometimes all I did was add a pastel tint around the outer edge. Then sometimes I add small figure-stencils on the sides to correspond with the scenery theme.

Lately I read that people are painting the petal dust on their gumpaste flowers using alcohol and petal dust. The reason they do this is to get finished sooner.  Dusting gumpaste flowers can take a very long time. If you know you can paint flowers you have a lot more options when using the commercial ones. You can buy white roses and then turn them into any color needed. Here is what someone wrote about doing this on my message board sometime back:

You can mix luster dust with lemon extract to paint it works much better than vodka or grain alcohol that's because extract has more alcohol and also has some oil in it -  it makes it go on much smoother I have found no problem mixing lemon extract with any luster dusts (must have been Lynn...no caps.)

You can paint on several icing types. Fondant, buttercream, royal etc. Have any of you painted on other types of icings? Such as BETTERCREAM etc?

'Real' painting on cakes:

You will be using icing to really paint the scenery on the cake. I would start out with more simple designs and lead up to more detailed ones. Use buttercream or royal icing. You will probably want to use buttercream. It is harder to work with royal icing and manage it before it dries too much. My picture was done using royal icing. It is years old now.

You won't need to be an artist to create this icing painting. (use a template of desired scenery- just a drawing so you'll know where to put a building, a fence etc.). Using buttercream, this picture would then be created right on your iced cake. To keep it, you can use royal icing on cardboard or a circle of fondant.

To create: no tips were used. This as all done with icing and a brush. Decide where you want the sun (or light) source to be located. In my painting, it is at the upper-left at about 2:00. You can see this because the paints are all lighter on the left, closer to the light. I started off with a template (pattern), applying it to the iced cardboard. (check out my stenciling to learn how to work with patterns). Dab the brush in water to smooth and blend colors.

You could use a bag of icing to apply it faster. I just didn't. You will need to smooth it out regardless.

Shading: dab your brush into 2-3 color-shades of icing and apply together, blending as you go. Add light-to-very light shades for 'light' shining on your scenery. Painting must be done in 'layers.' observe that the 'sky' was applied first, then the 'horizon' then the barn, the ground, the tree, etc. Scenery in the front should be on top of the sky, ground, etc. (1. Such as the barn, 2. Tree, 3. Fence posts, etc).

Brush: use a medium-soft brush. One that won't dig in too hard but will be stiff enough to distribute the icing where you want without too much effort. Use brushes that work well for you. I like to use a pointed type. The brush should be big enough to pick up globs of icing. Flowers are merely dabs of icing in a raised affect.

To keep - made of royal icing / to place the picture on a cake: raise it a bit with some sugar cubes (glued to the back with royal icing). Remove the painting before cutting the cake. You can frame it, but not under glass. After a few years, if you do nothing to preserve it, the icing will start to crack and fall off. Possibly you could spray this with shellac but you may lose some of the color shading. A bit of experimenting on a sample will help you determine this. Look closely and you will see that there is quite a bit of texture. This is done by applying 'piles' of icing where you want a raised affect.

Tips: you can also use this technique for parts of other cakes. Raised affects add 'life' to your cake pictures.

rancid after a week. does stabilizer help prevent that?
[Dolores7]   I don't make them over a week ahead. They also change colors.
I start on Monday to do all for the weekend

time.  I make royal if I need them for later.
[Dolores7]   MOTHER'S DAY IS ESPECIALLY FRUITFUL IF YOU TAKE ORDERS AND
DELIVER THE CAKES.
[Dolores7]   I like to make roses using buttercream. You couldn't bite or
chew a big rose made with royal.
<SandyKS>   I take orders up to Wednesday for Friday pickups. AFter that
the customer pays extra.  I'd never know what flowers I would need.

do you advertise to get orders if you're not legal?

and then the bakery bites.  Let it sit for just a little bit and then finish
filling with the chocolate.  That way they would be stuck to the first bit
of chocolate and not float to the top
