[ Dolores7 ] right Marida...that won't happen...
< Marida > Worse part was--I wanted to go shopping (had
a good excuse) and nothing was OPEN!
[ Dolores7 ] I didn't prepare anything for tonight.
Next Tuesday I promise I will
[ Dolores7 ] I really didn't know what to expect...didn't
know what you all do at chats being away so long
< LynneCA1 > did anyone bring their helpful hints??
< Marida > If I remember correctly, we didn't get the
idea to get together until near the time of the convention.
< TrishCA > So Dolores what was that great hint you
had to share with us....I've been curios since I saw your post?
< traciann > i'm so excited to get back into the regular
chats!! i had just joined them right before everything got so hectic for
everyone!! and reading the chat archives and stuff really makes me eager
to get going again!!!
[ Dolores7 ] HINT: Use florist clay on your flower nail
when making flowers on wax paper...instead of icing. It is so much faster
[ Dolores7 ] thats my own...I thought that up in 1970's
[ Dolores7 ] I found it at Wallmart in the craft dept.
< cakeshop > Right, Dee, because you can use a lot of
pieces of wax paper on one pice of clay
< LynneCA1 > *hint*: use tip #401 for beautiful
ruffles.
< traciep > i think i remember you teaching that in
your classes about 10 years ago Dolores
< andies_mom > never thought of that , that's great
will have to do that tomorrow when I make soem flowers
< Marida > Then, do you just pop it off and not have
to reice your nail.
< CarolAnnTX > Good one Dee, I like that hint.
[ Dolores7 ] lynne is that like the Argentina tips?
[ Dolores7 ] traci...I always tell everyone.
< LynneCA1 > no it's a wilton tip
< Marida > Lynne: I just hit that 401 thing and
it took me to the beginning. Did yur mean 104?
[ Dolores7 ] can't picture it
< LynneCA1 > those argentina tips **really!!** make
great ruffles tho
< andies_mom > What is an Argentina tip?
< LynneCA1 > no -- not 104 i did mean 401
< Marida > Where do you find those tips.
[ Dolores7 ] just use a VERY small tiny amount...smooth
it out til you barely can feel it. It will even stay on when you wash it
< CarolAnnTX > I learned it at a Wilton meeting.
< cakeshop > The Argentine tips are now sold as a set
in the cake store near me. Used to be able to buy them individually
[ Dolores7 ] Arg, tip...there is a set. My daughter uses
one to make fast ruffles...maybe the # is a 5...something. Anyway, there
is a pict. on my TIPS page
[ Dolores7 ] I think they sell them to us in sets
< andies_mom > ok, will look it up, tnx
< LynneCA1 > that tip 401 looks like a giant tip 81
-- it's simular to the 1/2 moon, yet different
[ Dolores7 ] Marida...I have pictures online
< Marida > I'll check itout, Dolores.
[ Dolores7 ] Oh - I know Lynne!
< cakeshop > lynnne, i can't wait to get to the shop
and see if i have that tip
< Marida > Lynne: Will that tip make roses?
< LynneCA1 > never tried that, but i don't think so
[ Dolores7 ] another HINT: when using the tiny little figures
in a scenery on a cake...and they just won't stand up....melt a puddle
of chocolate and set the figure's feet in it. It will harden fast and works
perfectly
< traciann > i have a question...especially for Dolores
or anyone else who specifically uses Bettercream
[ Dolores7 ] I wouldn't want to make roses with that tip
at all
[ Dolores7 ] go traci
< LynneCA1 > the only other thing i know to use it for
is to cover pillars -- like if you want to use dowels or disposables a
pillars

< traciann > Yes BETTERCREAM!!! hehehehe
< Marida > I never see bettercreme in any stores around
here.
< LynneCA1 > guess we all didn't catch 'better'cream.
it probably takes about 10 minutes. of course that depends on how
much you are doing at a time
< andies_mom > can you do that without bending the cardboard?
< Marida > If you tap it real easy, Dolores, it will
go in okay.
[ Dolores7 ] It comes froaen Marida...ask for it. OR try
Krogers...do you have Krogers?
< cakeshop > Me either, Marida. I have to get it from
the wholesaler
< traciann > marida it's kind of regional...i know dolores
uses it..that's why i directed toward her...it's only available certain
places i guess
[ Dolores7 ] I don't believe in pounding that dowel through...
< LynneCA1 > mom: i have had no problem doing
it. just sharpen the dowel and tap lightly
< CarolAnnTX > Watched Carolyn do it and it worked ok
for,lol
[ Dolores7 ] once in a teacher's class Wilton said to do
that...Us experienced decorators really grumbled...said we wouldn't do
it...all of us
< andies_mom > ok
< CarolAnnTX > me
< Marida > I only use the dowel all the way through
if I have four tiers stacked.
< traciann > ok..well now that everyone realizes i'm
talking bettercream...you all still in agreeance on the paddle instead
of the wisk??
< andies_mom > never have done it, if the cake was more
than 3 stacked I took it in 2 pices, and finishe stacking and decorating
there
[ Dolores7 ] The worst thing about stacked cake is IF you
tip it a little bit. That can cause the cake to shift. Keep it very level
while carrying it
< Marida > I have never had a problem with it.
I always give it a little twist after I put it in to be sure it will come
out real easy when we get there.
[ Dolores7 ] I've delivered 5 stacked with no center dowels...did
fine
[ Dolores7 ] nope traci...we use the whip
< andies_mom > my husband usually has to carry mine,
because I am clumsy and they get heavy
< traciann > ok..got it now
< traciann > so i'm not so nuts after all...that's good
to know!!
< LynneCA1 > no traci:) also, whip it *slowly*
-- like #2. yes will take longer, but comes out better.
when it is done you will hear a 'slapping' noise. you **must!*
stop mixer right then
< andies_mom > lol
[ Dolores7 ] LOL...I won't let my hubby TOUCH my cake...OR
drive the car to deliver wedding cakes
< traciep > it's a matter of opinion traci
< cakeshop > I don't stack mine til I get to the site.
Mine are just too heavy.
[ Dolores7 ] Lynne is right I think. I bet you have a bunch
of airholes
< traciann > lynne...what is the source of the slapping
noise??? the icing itself???
< CarolAnnTX > I had a lot of problems with stacked
cake especially delivering them.
[ Dolores7 ] agreed cake...
< Marida > Most of the time around here you do not have
time to put cakes together at the site. Plus, I like to level mine

[ Dolores7 ] That time we delivered 10 in one day it was
awful...one wrong move and we'd have been sunk!
< ShirleyR > WB mom2andie
< traciann > ok...thanks everyone for those tips!!!
< LynneCA1 > hi karyn and wb mom
< cakeshop > I ususally won't take more than two in
a day.
< mom2andie > you did 10 wedding cakes for one day delores?
[ Dolores7 ] we don't know the meaning of 'NO'
< mom2andie > most I have done is 3
< cakeshop > me too, mom2
[ Dolores7 ] no - 14...just delivered 10 of them LOL
< Marida > We take 4 a weekend now instead of 8 and
10. I sure like it better on delivery day. One weekend we put
350 miles on our vehicle.
< LynneCA1 > once i did 6 cakes in one day........never
again :(
< ShirleyR > Gosh..I'm afraid to do just 1 a day..LOL
[ Dolores7 ] Sue timed us. We sat up a cake with stairways
and fountain (side cakes) and were finished in 5 minutes
< mom2andie > oh my, how long did it take you to decorate
them all??
[ Dolores7 ] That week I had 5 cakes with fountains and
side cakes
< LynneCA1 > only someone who has done many, many setups
could do that!
[ Dolores7 ] I started at 6am and went home at 3 am the
next morning. It was graduation weekend...so I had company LOL
< cakeshop > I have three fountains, and haven't used
them in over 3 years. no one around here wants them.
< mom2andie > lol
[ Dolores7 ] That electric turntable is WHY I can do that!
The only reason.
< Marida > This year it seems the brides were getting
more all stacked cakes. Last year we did a lot of fountains but none
this year. A lot of them got that Martha Stewart cake with just rose
petals on it. Loved doing that one.
< LynneCA1 > i have 2. not many ask for
them anymore
< mom2andie > I have a cake topper that is a small fountain,
very neat
[ Dolores7 ] I don't like 'plastic' but young girls like
it...fountains
[ Dolores7 ] I think wedding cakes are more simplistic
right now
< cakeshop > I try to steer them away from those cakes
by not showing those type of pictures
< LynneCA1 > which kind don't you like cake?
< Marida > I think that is the clue, Dolores.
Young girls. This year our brides were more mature and wanted nice
but simple.
[ Dolores7 ] They are easy
< cakeshop > the ones that use all the plastics.
[ Dolores7 ] right marida. College age don't choose elaborate
plastic stuff
< CarolAnnTX > I have a 9 cake deal to set up this week-end,
< Marida > Claudia--were you doing more stacked this
year? We were.
< mom2andie > ones with lots of pillars make me nervous.
like 5 tiers...
[ Dolores7 ] wow Carol...thats a biggy
< cakeshop > almost all stacked, Marida.
[ Dolores7 ] mom...if the tiers are all separated you don't
need to give it a thought.
< Marida > Use pushin pillars.
< mom2andie > I am afraid of some kid banging into the
table and knocking itover
< cakeshop > Or they were on the separate pillars, like
the Van Horn-Hayward type stands

< ShirleyR > Marida..I ordered some wedding plates from
ebay yesterday..I'm going to give it a try..LOL
[ Dolores7 ] mom...take a picture showing it was okay...that
helps
< Marida > We do a lot with that Van Horn type stand.
< mom2andie > never used a push in, are they really
more stable?
< ShirleyR > Hi helenoh
< Marida > Shirley, I know you can do it. we will
all be cherring for you
[ Dolores7 ] mom...sure are faster. I like the wilton crystal
twist pillars the best
< cakeshop > I have too, Marida. I don't have that acutal
stand. I have the one from HIS
< mom2andie > thats in my contract, that once it is
delivered, set up, and I leave it is not my reasponsiblity any more, but
I still worry about them
< cakeshop > However, I have the flower towers from
VH-H
[ Dolores7 ] HI HELEN!!!! 'bout time
< CarolAnnTX > 3 cakes up the middle on a gazebo and
fountain, and stairs on eaach side leading down to three minnis on each
side.
< ShirleyR > Thanks Marida..if I bumble it up..I'll
send you a email saying I told ya..LOL
< mom2andie > are those the S shaped stands?
[ Dolores7 ] I'd like to introduce my friend Helen. She
lives close by. We've traveled together...shes a gem!
< cakeshop > Hi Helen
< traciann > Helen are you in Cinci too???
< LynneCA1 > hello helen
< ShirleyR > Hi helenoh welcome
< Marida > Dolores: Did you see the new spiral
cake stand at the convention? I think someone on the message board
might have been asking about that one. It looked like a real pain
to use to me.
[ Dolores7 ] she is north - Dayton ...traci
< LynneCA1 > shirley -- you won't have a problem for
sure
< traciann > ok...gotcha!
< CarolAnnTX > Hi Helen
< mom2andie > well all, my baby is awake so I need to
go. Thanks for the tips, see you all next week
< cakeshop > Bye mom
[ Dolores7 ] yes Marida...but as you know I'm not doing
cakes just now, so I don't want to start anything...

< ShirleyR > Thanks lynne..you all have more confidence
in me than I do..
[ Dolores7 ] Helen...are you here????
< Marida > I didn't like the looks of it.
< LynneCA1 > marida, i don't think that's what they
are looking for. what i got out of it, they want a cake that
turn like dolores' auto turntable
< cakeshop > I ordered a brochure about that spiral
stand. Weird!!!!
[ Dolores7 ] what Lynne?
< Marida > Who had it, Claudia?
[ Dolores7 ] There was a spiral stand...the cake had to
twine around. Really wierd and dangerous looking

< cakeshop > Thats what I thought too, Dee
< LynneCA1 > from what i read, they want a cake stand
that will rotate, not a sprial
< traciann > ok...i've obviously missed a very important
piece of info somewhere along the line...Dolores you're not doing cakes
right now??? i haven't heard of this...just you personally isn't decorating
or your shop isnt doing them at all????
< Marida > No, I am not going to get into that cake.
It sure was unusual.
[ Dolores7 ] The way I figure it...we take enough chances

know if I'd like it?

[ Dolores7 ] no - I can't. Putting out 50+ mail orders
per day is about all we can do. My daughter Joyce has that job now.
< LynneCA1 > hey dolores, want another decorator???
i
< TrishCA > Dolore I know you've been awfully
busy with the move and all but just wondering when the new newletter would

< ShirleyR > Trish it already posted..I d/l it today
< Marida > Dolores, do you think you would have a market
for that book from Austrialia.
[ Dolores7 ] yes...she can turn out about 75 cakes for
a Saturday
[ Dolores7 ] nope
< TrishCA > LOL.....the only day I didn't check...thanks
thats great !
< traciann > wow!! that's great!
[ Dolores7 ] remember that real dark blue stacked cake?
How ugly!
< Marida > Lynne, come my way. I could get you
a ton of business.
[ Dolores7 ] She isn't a perfectionist. I am too slow with
novelty cakes...takes me an hour to do one I think.
< Debbie_F > Marida, I don't know if it's the same book
you're talking about, but I saw a book with beautiful cakes from Austalia
today
< LynneCA1 > i think it'd be too expensive to come your

< Marida > Debbie, it had almost all fondant cakes in
it. I don't do fondant but you could duplicate some of those in buttercream.
< traciann > too expensive in ohio??? oh it can't be
any worse than california can it?
< cakeshop > I got both vol1 & 2. Theyre terrific.
I'm going to put my order in for Vol.3
< TrishCA > too expensive?
< Debbie_F > Yes, wedding cakes, chocolate, and lots
of variety
[ Dolores7 ] But Kerry Vincent got those...100 of them.
I think she had them sold when she ordered them. But she might have a few...no
harm in asking
[ Dolores7 ] ohio Lynne???
< LynneCA1 > i ment expensive to live in marida's area
< cakeshop > If you want Vol 3 which will be out next

< Debbie_F > Yes, Kerry Vincent book
< LynneCA1 > i'd love to come to ohio.....hubby would
too
< Marida > Claudia, Kerry is sending me the first volume.
Even though there are no instructions in there, a good decorator could
sure get some ideas. Seems like there were a lot of package cakes
also. Fondant is not big in this area.
< traciann > oh..never mind lynne...that was to marida..i
got it
< LynneCA1 > o.k. what did i miss?
vol 1,2,3 what?
[ Dolores7 ] Where I live it is WIDE open. You could open
up a market for fondant, gumpaste or anything. Build up prices a little
at a time and they'd pay. They really like quality here.

< Marida > There you go, Lynne. Stay some with
Dolores and some with me.
< ShirleyR1 > I got booted off..lol
< LynneCA1 > no one around here will pay for fondant!
if i gave it away i'd get a few
[ Dolores7 ] I saw how Earlene opened the fondant/gumpaste
market. I know we could here
< cakeshop > I had someone ask me for fondant, today.
[ Dolores7 ] using Pirch Shirley?
< Marida > Most around here don't like the taste.
Some of the decorators are using Chocopan.
< traciep > i take fondant cake for work orders all
the time. they love it
< LynneCA1 > i found chocopan hard to work with
< cakeshop > I mixed fondant with white chocolate candy
clay
[ Dolores7 ] she gets up to $15.00 per serving...now thats
business!
< Marida > I can't work with any of it.
< LynneCA1 > can't? why?
< traciep > i would much rather work with findant than
buttercream.
< cakeshop > It's not as white but tastes a whole lot
better. I know someone who uses a comb. of fondant, rolled buttercream
and candy clay.
[ Dolores7 ] it is so easy Marida...really is
< Marida > I wish Earlene would do a book. She
could sell as well as Colette Peters.
< LynneCA1 > for sure on that.
[ Dolores7 ] I teach my students...no one has messed up
yet...even the worst ones. Even if they are a bad decorator, fondant always
looks smooth and they are so pleased with themselves.
[ Dolores7 ] I sure do too marida...maybe she is working

[ Dolores7 ] a simple class marida
< cakeshop > I have trouble rolling out the larger ones,
Lynne. Sometimes I have my husband help me roll.
< Marida > I did a rolled buttercream and it came out
great. I probably need to just give it a shot.
[ Dolores7 ] After I covered that 2 foot long limo cake
I can cover anything with fondant LOL
< CarolAnnTX > My students had a ball trying the fondant.

of vinyl and turns icing and all over, onto the cake

have them do too?
< Marida > Earlene must do it the way someone told me
to do.
< CarolAnnTX > We made clowns too
[ Dolores7 ] Wilton and Regalice are easy Marida...try
that.
[ Dolores7 ] probably marida. She DID tell exactly how
on a chat not too long ago on aol
< LynneCA1 > wilton is only available to me -- at michaels.
i've made my own, but it usually is soooo hard to roll out i pay wilton
to make it.
[ Dolores7 ] a clown is what I have them do
< Marida > I bought some regalice and I still have it
but have not tried it. keith told me that is what he uses.
< cakeshop > I use Pettinice
< ShirleyNV > I have to ask a fondant question!
How do you keep the fondant from drying hard on a cake? I tried the
fondant to make bows and it turned hard really fast.
[ Dolores7 ] A customer got some today just to make lace
etc out of. This gal is an up and coming GOOD decorator...with great ideas
too
< LynneCA1 > i've tried them all. don't
remember now which i like best as i have never had them all at the same
time
< cakeshop > The moisture from the cake keeps the fondant
soft on the inside
< CarolAnnTX > I can't wait to get my pictures back
I made an armadillo laying on his back sucking a beer bottle, with a little
help and his sides were fondant
< Marida > I used it as an overlay on a cake like a
tablecloth and it got hard also.
[ Dolores7 ] shirley...what recipe or brand did you use?
< CarolAnnTX > Carolyn helpped.
< ShirleyNV > Just wilton's premade
[ Dolores7 ] i used regalice and wiltons both together...regalice
MAKES wiltons anyway.
< LynneCA1 > will you have the picture posted somewhere
that we can see it then?
[ Dolores7 ] gets hard if you don't cover it
< Marida > Do you mix them, Dolores? I like to
use Wilton's for my bows.
[ Dolores7 ] oh my Carol!!!!
< ShirleyR > Carol thats sounds like it will be cute..LOL
[ Dolores7 ] yes I DID mix them. They are the very same
< CarolAnnTX > I sure will.
< traciann > carol i'd love to see that one!
< Marida > Was it a 50-50 mix?
[ Dolores7 ] Wilton's has NO flavor and regalice has a
faint lemon taste...that is all
< ShirleyNV > I've never had an order for a fondant
cake, and don't really want one. :-) BUt I really like the
bows.
[ Dolores7 ] I used regalice til I ran out then used wilton
- on that castle cake
< cakeshop > Dolores, do you use extracts or candy oils
to flavor the fondant
[ Dolores7 ] bows with pearl dust are heavenly!
[ Dolores7 ] either...but I like the oils since it won't
thin it down...lots of people prefer hazlenut Lorann oil
< CarolAnnTX > Now that I have a scanner I can get some

< Earlene > Maybe just a little Trish. You make
yourself a pattern to cut just slightly smaller than the mold and then
place it on the mold and press it with your hands. No triming and
you can leave it in the mold to apply to the cake
