"HALLOWEEN CAKES TO CREATE," PLUS "EASY-QUICK CANDY IDEAS" TOO!

Don’t forget to log the chat.  Did you see that i finally did find time
to get most of our IRC chats on? I hope to finish that soon. I do still
need the logs from the 2 while i was gone. The first one was the log of
Renee’s. The other one was the following week that Earlene did. Please
send if you have a copy and I’ll post.

Have you visited our new FAQ area yet? These are articles posted by
individuals on my message board. Per suggestions of several decorators,
we are saving some of them forever. This way we don’t have to keep
repeating our answers. And people can get help anytime they want.

Now for some -- Halloween goodies - from the business perspective
In our shop, Halloween is a very busy season. It is 3rd only to Easter
and Christmas. This proves the consumer is looking for goodies to buy.
If you provide the desired items, you will make sales.  For Halloween
our customers are mostly interested in novelty-type candies, cookies or
cakes. -goodies they can serve at parties, more as accents than for
taste.

Ideas: best seller is the pretzel rod. We dip in coating chocolate
(white, orange, whatever). Then add one of Wilton’s handmade pretzel
Halloween novelty molded chocolates you've made. Glue mold candies on
with melted chocolate. Sorry, i don’t know if they are still available!

Cookies sell very well. Best seller is a jack '0 lantern shape. We make
a simple roll-out cookie and use buttercream icing to decorate - with
star fill-in - like you would a shaped cake, only use smaller tips of
course. These don't keep long. But they don't have to! People buy them
by the box full!  Check out my cookie icing recipe ---  where---in our
‘FAQ’ pages! That icing makes the cookies good. You can stack them but
the icing won’t get so hard that it draws moisture from the cookie.

For cake centerpieces more people choose a novelty shaped cake - not too
creative. Easy scenery cakes also go over big.
Scenery ideas: ice cake green with dark sky: …and
Tip: easy if you first ice cake white, then just add a top-coat of
preferred colors. Spread smooth with metal cake spatula.

idea: make nice tombstones out of Regalice or Pentinice ready-rolled
fondant. Not much difference in quality between these two, just brand
names. Simply color fondant, roll out & cut to shape with sharp knife.
Write "R.I.P." ..let dry for 1-2 days. We prop on back with a pretzel
rod secured with buttercream icing.

An easy scarecrow: use buttercream icing & pipe the scarecrow on a
pretzel rod/ insert into cake. Add an edible ghost of pre-made coating
chocolate lolly pop (on a stick to stand up-right). Or add any other
chocolate lolly pop novelty to complete your theme. We use Wilton’s mini
jack-o-lantern cake for pumpkins. Be sure to check out my Oct.
Newsletter for still a few more Halloween ideas.

Idea: (from an old free Wilton flier): jack '0 lantern biscuits for
Halloween morning. Biscuits: need Wilton’s mini pumpkin cookie cutters &
10 oz can flaky buttermilk biscuits. Place biscuits on ungreased cookie
sheet. Press cutter firmly into biscuits. Indentations should be very
clear. Biscuits take imprint best when used cold, do not let set at rm
temp before using. Bake at 400 d. For 8-10 minutes or until browned.
Serve hot. Makes 10 biscuits. Fun filling: jack '0 lantern in them for
Halloween morning. Wilton suggests peanut butter & jelly biscuits: cut
each biscuit horizontally in half. Spread ¼ teas. Favorite jelly & 1/2
teas. Creamy pb on one half. Press halves together & brush with water to
seal. Follow above directions for imprinting & baking.

Or, for dinner, try cornbread jack 'o lanterns: just bake your favorite
cornbread in Wilton’s petite jack-o-lantern pan. Fill half full and bake
as usual, until browned. Serve with nice warm chili.

>From a local friend, Barb Hubbard:  oh, got a quick idea. Saw a cute
cake the other day. Decorated to look like a trick or treat bag. Looked
like an 11x7 cut about 1/3 of top. Iced brown to look like a bag and
stuck candy in top to look like bag was overflowing with  candy. Used
tootsie pops and dots etc... Just piped black lines to make bag look 3d
and wrote trick or treat on the bag.  Was real cute.

Don’t forget next week’s chat. Susan and Earlene have some great fondant
ideas for you.
