----------- BUSINESS TECHNIQUES FOR CAKE DECORATORS AND SELLING CAKES
How do we market our cakes? I know of no better way, than
by 'word-of-mouth.' Perhaps you have a
friend or relative who works in an office or factory
who would be willing to show a few of your cakes off.
Send in a few samples. This is basically advertisement.
And believe me, this cheap advertising cost! I
made some cake drawings on 8x11 paper and posted them
on the local Laundromat & grocery bulletin
boards. A start is all you need. People will tell each
other. Most important of all, DO YOUR VERY BEST
(EVERYTIME). Make all your cakes so perfect and delicious
that someone is bound to ask "Where did
you get that wonderful cake?" You will be on your way.
Sure, things will be slow at first. But this is really
an advantage because you need time to learn. Expect to
be slow. Take your time and do a good job. It
won't take you nearly so long after awhile.
BUSINESS FIRST: Christmas is the busiest candy making
season. Easter or Halloween may be the next
busiest. Summer is very slow to non existent. But, you
can 'force your market' to fit your needs to a certain
extent, if you work at it. Many of our customers make
whatever they want to make, put it in a big box
and send it to offices. People buy it up. (Then they
eat all the candies and need more for their families ; )
....... Once you make the candies, it is really easy
to market them. Just make out a form similar to the Girl
Scout Cookie form. Take orders ahead or, if you prefer,
make whatever you like and take them (or send
with a friend or relative) to large offices and factories.
I know a gal who grossed $500.00 in 2 weeks at
Halloween, a teenage boy who used his money for a car
down payment, a couple who made a BIG
business of it so she could stay home with the baby.
Another gal who supplements her income with candy
making. Our cake club once made over $700.00 in one day.
People took the pre-made candy into factories
and offices and people bought it til it was all gone.
This was at EASTER. One successful couple
does it this way: They decide what they'll make, make a
few samples to show, then he takes those into work and
takes orders. They decided on a chocolate-long-
stemmed-rose for Mother's Day. This is packaged in a
clear rose box with green florist tissue paper and
tied with a pretty bow. There is not much cost involved
and I think they sold these for around $3.00 per
package. The rose is poured into a candy mold on a long
stick, wrapped in florist tape and a silk leaf
added. Whatever you choose, people are so busy that when
they find out someone is willing to bring it to
them, they are happy to buy it.
BRANDS: We carry Merckens dipping/coating
chocolate at Sugarcraft. (It is the demanded brand by
our candy makers). Another pretty good brand is Nestles
or Guittard (who makes flavored chocolate).
There are a few other brands available. Some taste 'waxy'
and some are 'gritty.' But you should do a 'taste
test' yourself and decide which you like the most. All
are similar in cost. The cost depends a lot on your
area. Here a 1 lb package $2.45. Larger quantity bags
are cheaper. People who make a lot of it buy 50 lb
cases of it.
WHAT TO CHARGE: These candies sell in my area for around
$7.00 per 1 lb box packaged. Or, for the
chocolate lolly pops, charge according to size.
PACKAGE IT PRETTY: Packaging will sell your candies!
Dress it up with pretty wrappings and a nice
bow.
HANDLING: Melting chocolate: Melt in the top of a double-boiler
or in the microwave (on defrost a
minute at a time, stirring between minutes). Do not get
it more than luke warm and do not get any
moisture or water in it or it will get hard instead of
melting. (Can be fixed if you do tho- use Paramount
Crystals, a flaky shortening. Melt in Microwave and add
as much as needed.) Next, I have a few simple
recipes........
Easy Peppermint Crunch: (This is hard tack candy with
food coloring and peppermint flavoring added). It
is not crushed candy canes. They would soften. Peppermint
Crunch is available from Sugarcraft or other
cake & candy shops. I think every family in this
are has a batch of this during the Holidays as much of
it as we go through. And sooo easy too.
2 lb White chocolate, 1 lb Peppermint crunch (it's pretty
- red & green) Melt chocolate, add Peppermint
and pour out on wax paper covered tray. Lay a piece of
wax paper over the top and press it down smooth
and even. Chill in freezer compartment or let set up
at room temperature. Break apart. TIPS: You can
also use this in candy molds. It is pretty. Wrap it or
place in tiny candy bags if you are putting it in a box
of candy or it will make ALL the candy in the box taste
like peppermint. VARIATIONS: Substitute other crunches
for the Peppermint, such as Malted Milk
Crunch, Tiny Krispie Crunch, Toffee Crunch, Peanut Brittle,
Coconut, etc.
Coconut Bon Bons---Only 2 ingredients! 3/4 cup Light corn
syrup; or more for softer candy, 2 1/2 cups
Dry Macaroon Coconut, NEED Coating chocolate; milk or
white, as preferred Heat the corn syrup
slightly. Do not boil. Add coconut. Stir to blend; let
mixture stand 1 hour or more. Roll into 1 to 1 1/2"
balls. Place balls on wax-paper lined cookie sheet. Let
stand while melting chocolate. These can either be
dipped or used in a candy mold. They are pretty (and
good) dipped in white or pastel chocolate and
drizzled on top with pink or red chocolate. HINT: Several
different candies can be CODED by using
different shaped candy molds and keeping a list.
BASIC CREAM CENTER (This is SOOOO delicious!) 2 1/2 lb
Instant Mix Dry Candy Fondant, 1/2 cup
Whipping cream, 1/2 cup Butter; softened, Vanilla or
other flavorings or oils (I use Lorann oil flavorings
in the tiny vials) DIRECTIONS: Combine Instant Mix Dry
Candy Fondant with the softened butter; blend
well and let stand for several hours or overnight. Knead
Fondant and butter mixture until creamy. Heat
whipping cream to the boiling point. DO NOT BOIL.
Add cream with vanilla or other flavoring to fondant.,
Cool slightly and knead smooth. Different flavors
may taste in the many variations of this recipe. Shape
into balls and use as centers in your candy mold,
following instructions previously given for filled candies.
VARIATIONS: Combine the above recipe with nuts, flavors,
coloring, fruit etc. Can you think of more?
CANDY COATED PRETZELS: Pretzels, of any sort, make a nice
addition to that special party. They can
be dipped in a variety of color and flavor coating chocolate
and rolled in sprinkles. The large straight
pretzel can be dipped in melted chocolate (half-way down
looks nice) and rolled in sprinkles or nuts.
DIPPED DRIED FRUITS: Dried apricots or other dried fruits
make delicious and healthy ways to coax
small children into eating their fruit. Usually fruits
are dipped only about halfway, leaving part of it bare.
CHOCOLATE-DIPPED POTATO CHIPS: Melt chocolate coating and dip potato chips halfway.
CHOCOLATE COVERED BANANAS: Insert a sucker stick of appropriate
strength. Freeze the banana.
Dip in melted chocolate coating (halfway, leaving some
exposed). Quickly roll in crushed nuts; chill.

crust more too.

her go back for groom's cake. it was raining too. seems like it took
her forever to get back and it's only 1/4 mile away.
[Dolores7] IF flowers are very fragile - like daisies
- then I DO always use royal i.

[Dolores7] For a cup I'd use about a teaspoon

[Dolores7] doesn't take much. IF it breaks down your
icing, add a little more p. sugar
<SandyKS> When I make buttercream flowers to dry,
they start to smell rancid after a week. does stabilizer help prevent that?
[Dolores7] I don't make them over a week ahead. They
also change colors. I start on Monday to do all for the weekend
<Marida> Sandy, I don't make buttercream flowers to
keep for a long time. I make royal if I need them for later.
[Dolores7] MOTHER'S DAY IS ESPECIALLY FRUITFUL IF YOU
TAKE ORDERS AND DELIVER THE CAKES.
[Dolores7] I like to make roses using buttercream. You
couldn't bite or chew a big rose made with royal.
<SandyKS> I take orders up to Wednesday for Friday
pickups. AFter that the customer pays extra. I'd never know what
flowers I would need.
<SandyKS> I'd love to make the rose box cakes for
mother's day but how do you advertise to get orders if you're not legal?

Never made up flowers ahead for others. I made them right on the cake.

MAKE A NICE ADDITION TO THAT SPECIAL PARTY. THEY CAN BE DIPPED IN A VARIETY
OF COLOR AND FLAVOR COATING CHOCOLATE AND ROLLED IN SPRINKLES. THE LARGE
STRAIGHT PRETZEL CAN BE DIPPED IN MELTED CHOCOLATE (HALF-WAY DOWN LOOKS
NICE) AND ROLLED IN SPRINKLES OR NUTS.

use for like the opera creams?

them all for shells and the stuff that sticks in the groves

a little bit and then finish filling with the chocolate. That way
