GINGERBREAD

WHEN I MAKE HOUSES, I ALWAYS MAKE THEM COMPLETELY EDIBLE

DOUGH AND BAKING
The most important thing in making a sturdy gingerbread house is the dough you use. If you plan on making the house to be eaten, you must also have a recipe that tastes good.

This is the basic recipe i use. This recipe works well for both houses and cookies. It is sturdy, but stays soft when wrapped as an individual item.
MELT THE FOLLOWING ON LOW –
1 cup vegetable shortening
1 cup molasses
1 cup granulated sugar

IN A SMALL BOWL, MIX TOGETHER
1 teaspoon baking soda
1 teaspoon salt
1 tablespoon ground cinnamon (you can substitute 3 teaspoons ginger and 1 teaspoon nutmeg for the cinnamon)

1 cup at a time
 ADD
4 ½ to 5 cups of flour.

I usually double the recipe, but find it too difficult to make more than that at one time. Roll out   the dough and cut your shapes. Bake the cookies in a pre-heated oven at 375 for 10 – 12 minutes.

 I bake my cookies on the air sheets with only a small amount of flour on the pan. The cookie   sheets can be placed in the refrigeration to cool the dough before baking, but in my oven, i don’t  notice a difference in how the cookies spread either way.

Although I don’t freeze my dough, It can be made ahead of time and be frozen for a couple of weeks  or months.

HINTS:
Place the cookie sheet on a damp kitchen towel – it will keep the sheet from sliding around.
A pizza cutter works well for cutting dough.
If the dough spreads too much, re-cut the piece while it is still hot.
When re-cutting the side of a piece, cut from each end into the center. This will keep the piece from
Tearing on the ends.
Trim the smaller pieces first, they cool the fastest.
If your house will have a light inside, make sure you cut a small hole for the cord. I purchase lights at the ceramic store. They only cost a couple dollars.
You can also use candles inside the house. Just make sure you leave a hole in the back so the candle can be lit and blown out.
By using either a light or candle in the house, the gingerbread is heated and the aroma on gingerbread will fill the house every time it is lit.

HOUSE PATTERNS
There are a lot of great books with patterns.
Suggestions: gingerbread for all seasons – Teresa Layman, gingerbread things to make and bake – Teresa Layman and Barbara Morgenroth, the gingerbread book - Allen d. Bragdon. You can also use birdhouse and dollhouse patterns; or create your own.

I cut my patterns from either poster board covered with clear contact, heavy cardboard, or core board. There are also some molds for gingerbread by companies like pampered chef.

I roll my dough right out onto the cookie sheet and use a pizza cutter to trace the pattern.

Gingerbread can also be baked over a glass bowl to make an edible gingerbread bowl. Pieces can also be baked over the edge of a soup can to create a curved balcony wall.

ASSEMBLING HOUSES
House can be “glued” together with royal icing or chocolate, depending on the look of the house, chocolate or brown royal will have a more subtle look than white icing.

I usually let my houses pieces sit a few hours so i don’t have to worry about sagging walls or roofs. I let larger pieces set overnight.

If you are in humid weather or making a rather large house, you may want to add supports to your walls. You can use styrofoam, but i prefer attaching craft sticks (ice cream sticks) to the back of my walls for support. Or you can even attach pieces of cardboard to the wall for support.

Make sure you have some jars or cans around to help brace the house when it is setting up.

For my smaller houses, i make a gingerbread base. For larger houses, you can use plywood, cardboard, etc.

Make sure your pieces fit together well. If not, use a serrated knife to trim any bumps on the side of the cookie. Or, you can heat the cookie just slightly in the microwave and the pizza cutter will easily trim the edges.

Assemble the four walls of your house. Make sure you use a generous amount of icing on all walls. Start with the front of the house to make sure the placement on your board is correct.
Next, add one wall at a time. Finish with the back of the house.

Now, it’s time to decorate the inside. I usually put a Christmas tree made from an ice cream cone and royal icing in the window with 2 gingerbread men “decorating” it. Also, I'll put a gingerbread man in an open door. This is a good way to block a light on the inside from being seen through the window or door.

Remember to put the electric cord on the board before putting on the back wall if the house will have a light.

When the walls are fairly well set, attach the roof.

HINT: if you put enough icing/chocolate on the pieces when assembling, the pieces will pretty much  stay together and you won’t need the supports. Don’t try to rush this process. if you do, your house may collapse.

DECORATING THE HOUSES
There are many ways to decorate a house. Gumdrops, peppermint sticks and M&M's are very popular. To create something really out of the ordinary, use items such as sliced almonds (will look like stone siding) and pretzel rods (will look like a log cabin).

Suggestion: Roofs – Wheat Chex Cereal, Shredded Wheat Cereal, Keebler Rainbow Wafers, Neccos
Suggestion: shutters – pieces of gum
Suggestion: tootsie roll uses – soften in a microwave to shape easily. Put on a pretzel stick to make a mailbox. Makes a great tree stump. Makes great bricks and walkways.
Suggestion: stained glass windows – crush any candy like a jolly rancher or lollipop. The crushed candy can be placed in the window cut-out when the dough is rolled and baked. Make sure you put enough candy in the cut-out. Also, bake the piece on foil so the candy won’t stick to the cookie sheet. The crushed candy can also be baked on foil and then attached to the inside of the window during assembly. If you put piles of 3 or 4 colors next to each other to melt, you will get a very

NICE EFFECT.
     Suggestion: pretzel sticks make great fences, or can be used on the house walls to create a tudor effect.
     SUGGESTION: those little chubby pretzels work great for a pile of logs in the yard.
     SUGGESTION: different flavors of bubble yum, or any type of block gum make great steps and bricks suggestion: fondant can be used to make a great snowman for the front yard. then you can use  pretzel sticks for arms.
     SUGGESTION: candy canes work great for pillars, lamp posts (leave the curve on the cane and put a yellow gum drop on the end) suggestions: if you’re making ornament and want to keep the whole think edible, strings of licorice work great instead of ribbon.
     SUGGESTION: coconut can be used for snow.
     SUGGESTION: wafer cookies make great doors
 

     NOTE: Where I Live, I Have A Problem With The Starlight Mints (The Red And White Round Mints)  Sweating And Sliding Down The Side Of The House Even After The House Has Sit For A Week.
     NOTE: if you are selling your houses, be careful when using gum. A lot of parents don’t like gum on the houses they are giving to their children.

     STORING THE HOUSE
     You can spray your gingerbread house with clear acrylic. This will give the house a great shine. Especially if you use M&Ms.

     Store the house in a plastic bag that has air holes. This prevents mold. Or, put the house in a box with air holes. This keeps animals and pests away from the house.

     NOTE: If There Is A Chance A Child Or Animal Could Get To The House, I Wouldn’t Spray It With Acrylic For Safety Sake.
