< earlene >   Sounds good Marmee
[ Dolores7 ]   Marmee...I use our coating chocolate...just add to buttercream
< earlene >   Any porportions used or just add until it looks and tastes right
[ Dolores7 ]   add white coating choc. to buttercream. It is yummy...about 1/2 lb per batch made with 2 lb p. sugar
< Marmee >   This recipe I'm looking for tastes like fugde but can be used to frost and decorate
[ Dolores7 ]   It will break down icing to add too much we found out
< earlene >   OHHHHH Yummmm - If you find it please pass it on to us.
< Marmee >   OK
[ Dolores7 ]   for chocolate icing I just add cocoa to buttercream, then thin it again

[ Dolores7 ]   COOKIES. IT DOES WELL WITH THE PRESS TYPE THAT LEAVE THE
[ Dolores7 ]   INDENTIONS IN THE TOP OF THE COOKIE TOO. DON'T BE AFRAID TO
[ Dolores7 ]   ADD A LITTLE BIT OF FLOUR IF DOUGH STICKS TO YOUR CUTTER. BUT
[ Dolores7 ]   NEVER ADD A LOT OR YOUR COOKIES WILL DRY OUT AND BE VERY HARD.
< earlene >   I wonder what would happen if you used hershey's syrup instead of the melted chocolate
< Marmee >   I'll do some investigating!
[ Dolores7 ]   would thin it a lot...kinda messy I'd think...Lizzzie...how do you make chocolate icing?
[ Dolores7 ]      THIS RECIPE IS IN MEAL MASTER FORMAT AND CAN BE IMPORTED

[ Dolores7 ]   USED IT FOR MANY YEARS. YOU CAN DOWNLOAD IT ON THE WEB. JUST
[ Dolores7 ]   DO A SEARCH FOR MEAL-MASTER (WITH THE DASH MAY BE BEST).
< ShirleyR >   I dont know earlene ..but it sure does sound good!
< earlene >   If you used it instead of the water?
< traci98 >   sometimes i used pwd sugar to help w/ sticking instead of flour...doesn't dry out as much...
< Lizzzie >   I use cocoa.  The Syrup doesn't work.  It takes tooooo Much.
[ Dolores7 ]   oh - that should work Earlene
[ Dolores7 ]   oh - expense for no reason...hadn't thought...good point
< earlene >   Lizzie has tried it evidently.....
< earlene >   Thanks Lizzie
< sweet112 >   I use a purchased fudge frosting mix as base and then add my own buttercream to it
[ Dolores7 ]   ---------- RECIPE VIA MEAL-MASTER (TM) V8.06
[ Dolores7 ]
[ Dolores7 ]         TITLE: GREAT-SHAPE COOKIES, AN OLD FAMILY RECIPE!
[ Dolores7 ]    CATEGORIES: COOKIES
[ Dolores7 ]         YIELD: 30 SERVINGS
[ Dolores7 ]
[ Dolores7 ]       1/2 CUP BUTTER
[ Dolores7 ]         1 CUP GRANULATED SUGAR
[ Dolores7 ]         2 LARGE EGGS
[ Dolores7 ]         1 TB MILK
[ Dolores7 ]
[ Dolores7 ]   --------------KNEAD IN 1/4 C FLOUR LATER------------
[ Dolores7 ]     2 1/2 CUPS ALL-PURPOSE FLOUR, SAVE 1/4 CUP
[ Dolores7 ]         2 TS BAKING POWDER
[ Dolores7 ]       1/4 TS SALT
[ Dolores7 ]       1/2 TS VANILLA
[ Dolores7 ]       1/2 TS ALMOND
[ Dolores7 ]
[ Dolores7 ]     CHILL DOUGH SEVERAL HOURS OR OVERNIGHT:
[ Dolores7 ]     COULD PUT THE DOUGH IN THE FREEZER
[ Dolores7 ]     TO CHILL, IF IN A HURRY, FOR 1-2 HOURS. HEAT OVEN TO 300
[ Dolores7 ]   DEGREES. GREASE COOKIE SHEET (ONLY ONCE). NO NEED TO GREASE IT EACH TIME.
[ Dolores7 ]       ADD INGREDIENTS TOGETHER, SAVING OUT THE 1/4 CUP OF FLOUR.
[ Dolores7 ]   KNEAD THE 1/4 CUP FLOUR INTO THE DOUGH NOW, CHILL. ROLL OUT, USING FLOUR
[ Dolores7 ]   ON SURFACE, CUTTERS AND ROLLING PIN, GENEROUSLY. TRY TO GET MORE FLOUR
[ Dolores7 ]   ON TINY PLACES.
[ Dolores7 ]        THIS IS A GREAT RECIPE FOR THE CREASED COOKIE CUTTERS,
[ Dolores7 ]   BECAUSE IT IS DELICIOUS AND DOUGH DOES NOT LOSE ITS SHAPE. FOR THIS TYPE
[ Dolores7 ]   OF CUTTER, ROLL TO ABOUT 1/4" THICKNESS, SO DOUGH IS JUST THICK ENOUGH TO
[ Dolores7 ]   LEAVE THE CUTTER IMPRINTS. ORDINARILY, ROLL DOUGH TO 1/4" THICKNESS FOR BEST
[ Dolores7 ]   RESULTS. ANY COOKIE WILL LOSE DETAIL AND SHAPE WHEN IT IS TOO THICK. THIS
[ Dolores7 ]   COOKIE IS GOOD ICED WITH THIN ROYAL ICING. COOKIE STAYS SOFT, BUT IS NOT
[ Dolores7 ]   TERRIBLY FRAGILE.
[ Dolores7 ]     BAKE 8-10 MINUTES OR UNTIL DONE. COOKIES SHOULD NOT BROWN.
[ Dolores7 ]     SOURCE: SHARED WITH ME BY MARY BILLERSEN OF CINCINNATI
[ Dolores7 ]   BECAUSE I HELPED HER REPLACE SOME FAVORITE COOKIE CUTTERS SHE'D LOST. THESE
[ Dolores7 ]   COOKIES HAVE BEEN A TRADITION IN HER FAMILY FOR GENERATIONS. DOLORES
[ Dolores7 ]
[ Dolores7 ]   HINTS:
[ Dolores7 ]   NEVER OVER-BAKE COOKIES! THIS MAKES ANY COOKIE GET HARD
[ Dolores7 ]   FASTER...MAYBE RIGHT AWAY IF TOO OVER-BAKED. MOST COOKIES SHOULD
[ Dolores7 ]   BARELY TURN A TINY BIT BROWN ON THE EDGES. THEY MAY LOOK
[ Dolores7 ]   UNDER-BAKED AND ACTUALLY BE FINISHED. THE COOKIES ABOVE SHOULD
[ Dolores7 ]   NOT BROWN.
< Marmee >   That sounds delicious
[ Dolores7 ]   Sorry...just wanted to do that one time ROFL
< ShirleyR >   I have purchased the chocolate powdered sugar before..and its pretty good
[ Dolores7 ]   SOOOO much better than aol!

< Nita_B >   Hi Lynne
< lynne2 >   hello everyone
< earlene >   Hi Lynne -
[ Dolores7 ]   ***ICING FOR COOKIES***
[ Dolores7 ]   I DETEST ROYAL ICING FOR COOKIES! IT DRAWS ALL THE MOISTURE
[ Dolores7 ]   OUT OF THE COOKIE.
[ Dolores7 ]   INSTEAD I USE A SIMPLE MIXTURE OF :
[ Dolores7 ]   DRY CANDY FONDANT
[ Dolores7 ]   WATER (scant amounts per fondant)...don't add much until you see
[ Dolores7 ]   how it incorporates
[ Dolores7 ]   FLAVORING, as desired
[ Dolores7 ]   COLORING, as desired
[ Dolores7 ]   ADD ENOUGH WATER TO MAKE THE ICING LIKE COLOR FLOW. YOU CAN
[ Dolores7 ]   ALWAYS ADD MORE FONDANT IF IT IS TOO THIN. SPREAD ICING ON THE
[ Dolores7 ]   COOKIE, COAXING IT TO THE EDGE, USING A KNIFE. PUT THE COLORED
[ Dolores7 ]   ICING IN A PARCHMENT BAG WITH A WRITING TIP AND DRAW
[ Dolores7 ]   DECORATIONS ON. IF YOU NEED TO MAKE 'STARS' ETC., IT WON'T
[ Dolores7 ]   HARM THE COOKIE TO USE ROYAL ICING JUST FOR THIS.
< earlene >   Boy we really need that speed reading course now   LOL
[ Dolores7 ]     YOU CAN STACK THESE COOKIES WITHOUT THEM STICKING TOGETHER.
[ Dolores7 ]   BUT THIS ICING STAYS PALATABLE AND TASTY SOFT TO EAT. COOKIES
[ Dolores7 ]   ARE MAILABLE. I MAILED SOME TO PORT OF TRINIDAD LAST WINTER!
[ Dolores7 ]   TWO BROKE OUT OF OVER 200.
[ Dolores7 ]   Well...we can read recipes later in our log...maybe I should go slower???
[ Dolores7 ]     DRY CANDY FONDANT IS AVAILABLE FROM OUR CANDY PRODUCTS PAGE
[ Dolores7 ]   AT http://www.sugarcraft.com
[ Dolores7 ]   look at that! It made the link - I can't believe this!
[ Dolores7 ]     THIS IS A SUGAR...NOT POWDERED, NOT GRANULATED, BUT ANOTHER
[ Dolores7 ]   TYPE. IT IS ALSO THE TYPE TO USE WITH PETITE FOURS. FOR THIS I
[ Dolores7 ]   POUR IT OVER THE CAKE, CATCH THE DRIPPINGS AND REUSE. YOU'LL
[ Dolores7 ]   NEED TO HEAT IT A LITTLE BIT...BUT NEVER GET IT HOT! ADD ENOUGH
[ Dolores7 ]   DRY CANDY FONDANT SO THAT IT WILL BE THICK ENOUGH TO COVER THE
[ Dolores7 ]   PETITE FOUR THICKLY ENOUGH SO THAT CAKE DOES NOT SHOW THROUGH
[ Dolores7 ]   THE ICING.
[ Dolores7 ]   HOPE MY RECIPE HAS HELPED TO MAKE YOUR HOLIDAYS A FUN TIME.
[ Dolores7 ]   MAKE GINGERBREAD MEN AND LET THE KIDS PLAY. YOU WILL NEVER
[ Dolores7 ]   FORGET THIS FUN TIME WITH THEM.
[ Dolores7 ]   Thats it folks. Try this cookie recipe...it IS special
[ Dolores7 ]   okay Earlene
< earlene >   OK
< ShirleyR >   Thanks Dolores7
[ Dolores7 ]   welcome Shirley
< earlene >   I had a cake on the 11th that really turned out to be a lot of fun.  The brides dad was having his 50th birthday on her wedding day.  So her mom ordered a $50 dollar bill for his birthday as a surprise at the wedding reception.  I took a 9X 13 and cut two inches off of one side and added it to the end of the cake to make the shape right.  So it ended up being a cake 6 1/2 X  15 to fit the 50 dollar bill shape.

< Marmee >   On the topic of cookies...thanks to all who responded to my message board request for ideas to fancy up store bought cookies. You're all great
< ShirleyR >   hi Trish
< earlene >   I scanned the 50 dollar bill and enlarged it to the size to fit the top of the cake.  I was absolutely amazed at the detail on the dollar bill now.  I knew right away that I wasn¹t going to get that intricate in the design.  So I layed the scanned - scaled dollar pattern on top of a piece of styrafoam and took a pin and pin pricked (otherwise like sewing with a pin) the basic important lines and details.
< lynne2 >   earlene did you take the i.r.s bite out??
[ Dolores7 ]   For formatting you can take that recipe into WORD and delete my name by pressing Control with F8 and Shift all at once...then delete down rather than accross
[ Dolores7 ]   Hi Trish
< Trish >   hi Shirley and everypne :)
< earlene >   i.r.s. bite???
[ Dolores7 ]   Oh...Earlene's a counterfieter
< earlene >   Then I layed that pin pricked pattern on top of the iced cake and airbrushed through those pin holes gently to mark the main patterns on this cake.  I then carefully airbrushed all of the darker green areas and the face.  Piped on the rest of the lettering and numbers that I could.  Then the little tiny writing such as the signatures and Series numbers were painted on with a fine detail brush and air brush color.  I just put this cake picture on
< sweet112 >   Could you scan that on to fondant sheets for printer?
[ Dolores7 ]   Once I freehanded a dollar bill...took me all day
< lynne2 >   yes, yrs ago someone did a  cake like that w/the i.r.s. bite -- bite marks w/a hunk out of the edge
< earlene >   Right a counterfieter that was eaten

< Marmee >   I've wondered about that too. Dolores
[ Dolores7 ]   Lynne...I think Colette reads the board often. Its amazing all that is posted there

< earlene >   traci98 this room is available anytime cake decorators want to chat.  Right now Dolores and I will try to be here weekly but we will have information posting chats for sure on the 1st and 3rd Tuesdays for you

< ohmigosh >   LOL..now I'm even more impressed
< earlene >   Picture jogged my mind Dolores -  Could you send me the picture of the group at the ICES show.  I tried to print it and only got you, sam and janice
< SusanM >   Could you use the sports ball pan and lay it on its side then carve it down to the body shape you want.
[ Dolores7 ]   It was for a pig roast for a local school district....looked more like pork that cake LOL
< lynne2 >   i'm going to do it almost that way except use 2 14" rounds cut in 1/2 instead of sheets
< Shirley_C >   earlene ? How are the pearls connected to make the pearls a strand?
[ Dolores7 ]   For a small one maybe Susan
< SusanM >   Oh, yours was a biggie piggie, eh?
< Marmee >   earlene, do you have a picture of a cake with the fondant pearls?
[ Dolores7 ]   sure Earlene...but I don't have it on this computer. I'll lighten it a bit for you using iPhoto Express...will be better
< traci98 >   i bought some Rich's bettercream today...have never used it yet..anything i should know??? how does it pipe for roses/borders,etc. also??
< lynne2 >   my customer specified 20" long; 8" high and 10" wide
< earlene >   One side of the pearls isn't totally clean and that side goes to toward the base of the cake.  That hold them together
[ Dolores7 ]   big pig - yes...maybe served 75 or so...was half sheets stacked...
[ Dolores7 ]   oh my Lynne!
< Marmee >   Bettercream works great for roses
< SusanM >   Wow.
< earlene >   I just got that mold myself so I haven't used it yet
< Sara_225 >   Dolores  7  I discovered that the printer 5100 works only on 110 voltage how about 4650  do you have any idea about it?
< earlene >   The only cake I have so far I made each pearl individually and that is really a big pain
[ Dolores7 ]   traci...fine forroses...the longer you beat, the stiffer it gets
< Marmee >   traci98---e-mail me about the Bettercream
< lynne2 >   has anyone seen rich's 'golden topping'?  my store is carring it instead of bettercreme

< traci98 >   ok Dolores7, thanks!
[ Dolores7 ]   I haven't seen that Lynne
< Sara_225 >   yes i am
[ Dolores7 ]   KopyKake has 220 I suppose - on theirs. I think you can change voltage pieces...KK is sending a guy in UK that today...they sent 110 in error
< earlene >   I have a customer who called today and needs to know if I can find an icing that will not have soy in it.  Does the bettercream contain soy?  Would one of you who uses it please check for me?
< Sara_225 >   does anyone have an idea abouty the printer 4650?

< Sara_225 >   Hi Shirley_c
< SusanM >   It is?????
[ Dolores7 ]   I didn't either Earlene!
< lynne2 >   how did you find that out earlene??
< PamG >   News to me, too!
[ Dolores7 ]   Guess they are allergic to Soy
< traci98 >   earlene, it has soy oil, and soy protein concentrate....
[ Dolores7 ]   Lynne...is that topping gold colored like butter?
< Isisgirl >   Are you all getting lots of orders for the pictures on cakes.  Just wondering what my next investment should be.
< earlene >   she is highly alergic to that -  I didn't know that either until I read the ingredient list - it is right there on the label.  She said nearly all the shortnings available in the supermarket are soy
< earlene >   I guess that is out to.  Thanks traci
< lynne2 >   i don't know -- didn't buy any.  have it w/the pastry pride
[ Dolores7 ]   Isisgirl...my business is slowly increasing
< PamG >   Well, that's good, right?  Unless you're allergic to soy, of course.

< Sara_225 >   Shirley_C  has your father birthday passed or not ?
[ Dolores7 ]   They certainly seem to be.
< Shirley_C >   I've still got a questions about those pearl molds.  How are the pearls connected to make the strand?
[ Dolores7 ]   yeah we're gabby tonight
< Isisgirl >   ty again all.......would soy be considered a vegetable fat?
< earlene >   They are made from fondant, choco paste or gumpaste and the mold make them in a 6 inch strand.
[ Dolores7 ]   Isisgirl...I have the BJC5100 and it is grand!
< SusanM >   From soy beans - aren't they a vegetable (plant)?
< Marmee >   Is the pearl strand then just pressed into the soft icing?
< Isisgirl >   That's what I am considering Dolores.  thanks
[ Dolores7 ]   can you tell where the pearls are connected?
< lynne2 >   earlene, i just ck'd pastry pride -- i guess you can't get it but the only soy it contains is soy licithin conmpared to the other w/soybean oil
< Sara_225 >   i'll be back probably in half an hour...bye
[ Dolores7 ]   there is going to be a 6000 soon...ink cartridges sep. for ea color...but doesn't do 11x17 sheets
[ Dolores7 ]   ok Sara
< earlene >   The front side of the strand comes out clean and looks great.  The back side of the strand has some icing where the pearls are connected and not wonderfully clean round pearls.  But if you put that down to the base of the cake it won't be seen and connects the pearls to keep them from coming from together

< Isisgirl >   I think I would like the larger prints.
< earlene >   I guess if you were doing scollops of pearls on the side of the cake you could just press that part into the cake icing
< SusanM >   Earlene:  would it be easier to make piped round balls that just look like pearls?
[ Dolores7 ]   I have only had one request for the large...the sheets cost twice that of the small ones. I am charging $12.00
< ohmigosh >   has any one tried those pearl/ball plunger set that Rosemary Watson carries?
< Shirley_C >   Sara 225 would a converter work, what voltage do you need?
[ Dolores7 ]   Susan...this makes a 6" strand all at one time...may be a little faster
< SusanM >   O.K.  Just seems like a lot of fuss for some balls.
< Isisgirl >   well maybe I don't need that then.....ty Dolores
[ Dolores7 ]   Sara left...but she can get the other coltage I think, then install it herself
< earlene >   B ut can you brush the pearl dust on those to really look like pearls.  The instructions say to brush the mold inside with the pearl dust and then put the fondant in so they come out already dusted with the pearl dust
< SusanM >   Oh, I see.  Thank you.
[ Dolores7 ]   Isisgirl...the 5100 is THe BEST. i HAVE THE 6000 BUT THE INK ISN'T READY YET
< PamG >   I would assume the pearl dust also helps with release from the mold, too.
< Marmee >   It would really be neat to see an article with color photos using the fondant pearls!
< earlene >   Probably so.  I can see I must find some time to play with that mold

< PamG >   Gotta go!  Catch you guys later!
[ Dolores7 ]   by Pam
< ShirleyR >   bye PamG
< Sgr >   nite PamG
< Nita_B >   bye Pam

< Shirley_C >   Bye Pam
< ShirleyR >   wb Sara_225
< earlene >   Or price it high so that maybe they would go somewhere else
[ Dolores7 ]   I would be so uneasy that I would just say I am booked already. I wouldn't insult them or hurt their feelings
< Sara_225 >   Thank you ShirleyR
< earlene >   But I have my prices right on my cakes so that won't work for me
< ohmigosh >   why?
< Shirley_C >   Sara .. Before you left I was asking what voltage you need?
[ Dolores7 ]   ...better to be 'booked'
< SusanM >   Am I lost here?  You are talking about two gay fellows wanting to order a wedding cake?
< earlene >   I ask about dates before I even let them come to the house so if they get through my door I would have a hard time saying I was already booked
[ Dolores7 ]   needs 220, right?
[ Dolores7 ]   yes Susan...sleepy LOL
< Sgr >   the prices on your pics. earlene?
< SusanM >   I don't see what the problem is with that.
[ Dolores7 ]   guess so Earlene
< earlene >   Right
< Sara_225 >   i need 220vol
< lynne2 >   yes, i think i'd dbl ck my schedule & not be available
< ohmigosh >   you would lie just because they where gay?
< Sara_225 >   yes Dolores right
[ Dolores7 ]   Sara...get that from KopyKake and have it installed. I know they carry them
< SusanM >   What would be difficult about doing the cake for them.
< Shirley_C >   Would a converter work, I don't know .. I've never traveled, but I know they sell them for overseas travel.
[ Dolores7 ]   The guy in the UK is doing that Sara and friends had told him it is easy to exchange voltage.
< earlene >   I guess because it would really comprimise my beliefs on the sanctity of marriage
[ Dolores7 ]   I wouldn't even try a converter like for hairdryers. Printers are too sensitive...My 5100 even had to have one of those fancy new black cables

< lynne2 >   i started to reply they are paying customers just like everyone else, but then i refuse to do x-rated:(
< SusanM >   Oh, I understand.  It is getting to be so common around here, I guess I wouldn't think of it that way.
< Sara_225 >   yes they've told me it comes wiyh small transformer i'm not sure if this effecting the printer after using along time or not? what do you think?
[ Dolores7 ]   I wouldn't try to use 110 sara...you can damge your printer and the warranty won't be valid
< ohmigosh >   but we're not selling our beliefs and we're all allowed to hold those close....all we are doing is selling a cake
< lynne2 >   i think i might discuss that w/my friends at church
< traci98 >   i don't think it's up for me to judge whether or not someone else's lifestyle is right or wrong...God will judge that in the end :)
< lynne2 >   your right trish.  this will take some thinking thru.
[ Dolores7 ]   (I) have mixed emotions...I think gays can't help it and are really made different...guess they deserve a break, but I sure would not be comfortable
< Marmee >   I've gotta go...if anyone has any cute, easy ideas for dressing up store bought cookies; please e-mail me. Marmee1953@aol.com TIA
[ Dolores7 ]   Sara...email or call KopyKake...you can have one in a week. Shipping was $12.00 to the UK
< lynne2 >   nite marmee.  i'll get those to you tonight
[ Dolores7 ]   ok Marmee
< Nita_B >   Night Marmee
< traci98 >   this could turn into a whole 'nother "ACD-October" issue....LOL
< Shirley_C >   I don't think I would have any problems doing a gay wedding cake.  But it is a NO to the saucy cakes.
< SusanM >   brb - coffee time.  Bye Marmee.
< ShirleyR >   nite Marmee
< earlene >   Something to think about.  We may all be faced with this at some time in the future.  I know I have friends who are gay but I don't talk about that with them.  I just appreciate them for the individuals they are.
